Atsushi supps (McLeay Street Bistro, Potts Point): All that lovely richness on the palate with aromas of toast, butter joining the slightly lemon, lemongrass, kaffir lime leaf notes which all translate to the palate. Perfect with fat pacific oysters.

This was a treat for two Hunter Semillon lovers. It had classic aged hunter semillon notes. Lemon, toast, honeysuckle, white flowers, lanolin. It had a lovely waxy texture. The flavours were not intense but instead shifting around as we drank it. A very stylish wine.

I always wanted to try an aged Sémillon especially one from Hunter Valley as I learned that Hunter Valley Sémillon could be one of the longest life white varietal in Australia. I was a bit nervous when I read that this bottle should be drunk by 2009 according to JH, although my friend retailer assured me that he just tried one and it's still holding on, but inevitably there is still some risk of bottle variation. It has turned out to be a pleasant surprise when I brought this bottle to enjoy with friends. Light golden light, the colour resembled an aged Sémillon. The nose is fragrant and fresh with lime, green apple, pineapple and some hints of honey. It has rounded mouthfeel and balance acidity carry through the palate with floral, lemony, and hints of smoke and toastiness. It still has good freshness and not heavy at all. Really a fine example of a delicious aged Hunter Valley Sémillon.

Georgeous deep yellow. Understandably the fruit was a bit restrained but the flavors were wonderful.
