Delamain masterclass persented by Olivier Jadeau (Bel & Brio, Barangaroo): Orange and orange peel over caramel and vanilla with lashings of floral top notes and a little leather. More of the same on the palate, soft, easy, dangerously quaffable with the vanilla more to the fore and a little sweet spice joining in.

Bottles tasted in recent years in Spain and The Netherlands gave me the impression that this Cognac has become less austere and precise than it used to be, with perhaps more ripe orange fruit gained in the bargain. This bottle in Austria takes me right back to the old days; precise, clean, dry, mineral, an essence of its chalky terroir without any attempt at a grandstanding performance. Is there a different recipe for different markets? Or is this just a fluke? At hotel Tennerhof, Kitzbühel, Tyrol, Austria.
