Caramelized weathervane scallop a cauliflower mousseline, caper emulsion

  • 2004 Domaine Saumaize-Michelin Pouilly-Fuissé Haut de Crays - France, Burgundy, Mâconnais, Pouilly-Fuissé
    Great nose displaying a burst of lemon citrus, along with some floral white flowers, crushed sea shells, saline, and dense charred oak. The toasted oak follows through to the palate, along with some bright fresh lemon juice, crushed slate, and more floral notes. Long length finish ending on notes of fresh lemon and charred oak. Where the oak starts to slightly take over, the crisp acidity helps bring it back into place and balance this out. Very good.
  • 2004 Maison Albert Bichot Chablis Grand Cru Bougros Domaine Long-Depaquit - France, Burgundy, Chablis, Chablis Grand Cru
    Unfortunately this was rather advanced. Ripe banana and fresh caramel dominated the nose. Burnt oak, caramel, bananas, and lemon on the palate. I was looking forward to trying this bottle, it's unfortunate this was heavily oxidized. Not rated

Crispy Arctic char perfumed with five spice, verjus & red wine reduction

  • 2002 Faiveley Mercurey 1er Cru Clos des Myglands - France, Burgundy, Côte Chalonnaise, Mercurey 1er Cru
    Some high tuned spice upfront on the nose, along with aromas of bright red cherries, raspberries, and a hint of asphalt. More bright red cherries on the palate, as well as notes of boysenberries, raspberries, earth, and plenty more spice. Plenty or structure, showing piercing acidity and plenty of hard gritty tannins. Medium length finish ending on notes of boysenberry and raspberry. This is quite elegant and a bit muddy on the palate, with bright firm acidity. While good I think a couple more years will help this come together. Good+
  • 2002 Domaine Michel Juillot Mercurey 1er Cru Clos des Barraults - France, Burgundy, Côte Chalonnaise, Mercurey 1er Cru
    Quite rustic and muddy on the nose, showing aromas of black cherry, spicy black pepper, and red currants. More black cherries and black pepper come through on the palate, along with some kirsch, blueberry, and a touch of floral violet. Plenty of sharp acidity, with a medium- length finish ending on notes of kirsch and violet. Dusty and muddy on the nose, while the palate was an improvement, it wasn't by very much. OK

Roasted breast of Fraser Valley duck gently smoked in Mountain berry tea salsify, sweet onion jam & orange sauce

  • 2000 Domaine Méo-Camuzet Vosne-Romanée - France, Burgundy, Côte de Nuits, Vosne-Romanée
    Great nose showing plenty of Burgundy funk, along with aromas of ripe black plums, red cherries, and black pepper. Lots of rich black cherries on the palate, with more spicy black pepper, dirt, and funk. A good showing of acidity with a moderate amount of dusty tannins. Medium length finish ending on notes of black pepper and black cherry. This is really enjoyable in it's present state and shows no signs of falling apart, despite most reviewers projections. Very good
  • 2000 Domaine Méo-Camuzet Vosne-Romanée 1er Cru Les Chaumes - France, Burgundy, Côte de Nuits, Vosne-Romanée 1er Cru
    This was super funky on those nose, showing animal meaty notes layered with sappy dark fruits and some violet floral aromas. More earth and funk on the palate along with concentrated dark berries, black cherries, and black licorice. Plenty of firm acidity with dusty tannins. Great depth and concentration with a pure velvet texture, this was just delicious. Much more interest than the Village VR tasted along side. This still needs time and patience will surely be rewarded. Fantastic

Grilled Wagyu rib-eye homemade truffle scented oxtail ravioli, parsnip purée Burgundy truffle sauce

  • 2000 Nicolas Potel Clos St. Denis - France, Burgundy, Côte de Nuits, Clos St. Denis Grand Cru
    Plenty of earth and funk on the nose, along with aromas of bright red cherries, black pepper spice, and pomegranate. More earth and sweaty funk on the palate, as well as some black cherry and black pepper. Plenty of acidity, with a medium+ length finish ending on notes of earth and raspberry. This was very nice, but got overshadowed by the Laurent in the same flight. No valleys, but no real peaks either. Very good
  • 2000 Dominique Laurent Clos St. Denis - France, Burgundy, Côte de Nuits, Clos St. Denis Grand Cru
    Tons of funky sweat and meaty notes on the nose, along with some rich black fruits, asphalt, and violet. The heavy funk carries through to the palate, showing more earth, ripe black cherries, anise, red plums, kirsch, charred oak, and lots of spice. Lots of acidity coupled with drying chalky tannins. Long length finish ending on notes of kirsch and spice. This had more depth and better texture than the Potel tasted along side. Funky, great fruit, delicious. Very good+

Delice of golden delicious apple strudel & tarte homemade pistachio ice cream

  • 1999 Château de Malle - France, Bordeaux, Sauternais, Sauternes
    Pleasant nose showing aromas of ripe apricot, stone fruits, honey, white flowers, and fresh orange juice. Plenty of ginger spice on the palate, along with red apples, apricots, a touch of tropical fruits, and toffee. Long finish ending on notes of caramel and candied ginger. Great rich texture on the palate with a bite of spice. A nice way to end the evening. Very good-
