I last had this wine in 2011 --- that bottle remains the best Napa Cab. I've had. Fast forward 12 years, and we have this bottle here. Cork in pristine condition. Fill was bottom neck. Quite youthful color, considering we're talking a 30 yo wine. Aromatically, this is at peak --- dark, giving, and well into tertiary territory -- beautiful aromatics. On the palate, this was very tasty -- excellent -- but I sense that it is coming down off its peak, as it was a bit lacking in drive. Drink Now and over the near term. (739 views)

Tasted blind. Not decanted and none necessary, but feel free to go for up to 1h. Fruit forward bouquet showing refined red cherry and blueberries, dry earth, mineral notes of ash and pencil shavings. There is also a nice spicy touch. But that is only the first impression. Quickly you’ll also discover fine aging notes of tobacco and plenty of cigar box notes. Amazing tension, soft texture thanks to velvety, perfectly integrated tannin. But make no mistake, there is a bold and commanding stature that shines through a finish that goes on and on. With aeration this later added an elements of eucalyptus and menthol with the latter becoming more and more pronounced. All the while, the fruit remains immensely fresh and sweet. One of the best aged Napa cabs I’ve had to date, easily competing with Dominus and maybe even surpassing the Dominus of the same vintage. (2006 views)

Tasted double blind. No detailed notes taken. I was convinced this was a left bank Bordeaux, probably a St. Julien. There was so much fresh, pure blue fruit, forest berries, not a shred too ripe, lots of minerality, some tobacco and black truffles in the background. Melted tannins, well-integrated and medium- acidity, good balance and completeness. What was missing for a higher rating is more acidity and tension. Compared to the Dominus 1994 in the next glass, this Hillside had a bit less substance and much less precision and flavor intensity too.Still a great wine and highly elegant and round and for sure the most Bordeaux-esque Hillside I’ve had to date. Only with a lot of time in the glass, more eucalyptus/mint notes and a touch sweetness came out, hinting a bit that this could be classic Napa. 95 pts, only beaten by a stunning Dominus 1994 (rated 97+ pts) in the next glass, which had much better precision and tertiary aroma concentration.

Decanting: Not decanted, followed over a few hours. The wine opened-up a bit but still, I don’t think it needs more than an hour or two in the decanter. (2186 views)

I've had 2004 and 2010 Hillside (both 100 pts) and they don't compare to this bottle...although I hope they do with similar age on them in the future. The table was split on whether it was flawed or not, but I don't think it was beyond the typical bottle variation for a 27-year old wine. I called it wonderful and young tasting, but am very aware that we missed by not decanting it (and potentially for a more extended period of time). I'd never have guessed it was a 24 year old wine. Something seemed a little off with this bottle. A touch of volatile acidity and band aid on the nose. It didn't complete ruin the wine, but it gave enough of an impression for me to think this wasn't a proper bottle and shouldn't be rated. There was a bit of drying on the back end, but this was clearly a more earthy vintage compared to any of those in this 1991-1996 vertical. Flawed. (3941 views)

My first experience with Shafer and what an experience it was. Dark opaque color to it, showing little-to-no signs of this being almost 20-years-old. Nose of cassis, black fruits, dark cherries and an earthyness to it, but there was more than that to the nose, they all really came together that kept me sniffing my glass over and over. Medium-full bodied wine with everything in amazing balance. Dark fruits and earth on the palate leading to a wonderfully long finish that showed amazing balance between tannins, acidity and fruit. Just kept getting better and better as it went. Almost rivals (though not quite) the 1977 Mayacamus I had a few years back. WIth time though, I could easily see this getting there. NOSE: blackberry; leather; a bit funky/earthy; spearmint-tinged Good ‘n’ Plenty candies; deep florals; hint of chocolate. The Nose started off pleasurable, but with time in the glass gained additional complexities, and eventually left me spellbound.

BODY: pitch purple-black color of medium-deep depth – looks like it was born yesterday; medium-full bodied. Cork was in pristine condition - soaked only a mm - probably could have outlived myself.

TASTE: purple-fruited; polished; still has loads of fruit; black cherry; hint of leather; full palate; tannin still has some grip; stony smoke; hint of oak. Fruit comes across as mostly primary, with hints of tertiary elements starting to creep in. Like the Nose, the overall quality of this wine crept-up on me without me overtly noticing it. This was absolutely stunning, albeit not in a “show-stopper” sort of way. This wine is powerful, elegant, and perfectly proportioned. Although it was not closed, I got the sense that it was still somewhat reserved. I don’t think this has even entered its prime drinking window yet – I’d say it needs another 10 years for that, and I could see this *easily* going another 30 years before it begins to degrade. Easily the best CA Cab. I’ve had to date. Delightfully demure!

Popped with a short decant...pristine looking cork. Dark color with very little bricking, mature red fruits, graphite, cedar, spice. On the palate there large-scaled dark, ripe red fruit, sweet oak, with a rich midpalate, medium acidity and a nice long finish. Still plenary of tannins here but lacking a complexity and still a bit youthful. At almost 20 years the oak still hasn't fully integrated, so I'm not sure if it ever will...perhaps this suffered after tasting the 1982 Mouton before it. (4520 views)

Inky, tinged with purple, looking young and concentrated. Floral, perfumed nose, still showing some oak, and growing quite generous with air. On the palate, very sweet fruit and persistent hot alcohol (only 13.5% on the label), with very little complexity. This could almost pass for a young vintage Port, though showing a real lack of depth, made worse by the alcohol. Considerable tannin. Some stemminess on the medium-length finish. Drink now, as the alcohol seems to be gaining an upper hand. Overall a disappointment, as this bottle appeared in superb condition. (4845 views)

Dark red to rim. Needs 30-60 minutes to open up, but then very forward nose of ripe cassis and dark fruits. Full-bodied, layered rich plummy fruit, excellent balance, tannins still present but fully integrated, nice long finish. The wine has evolved, trading some of its up front fruitiness for a bit of complexity, but has not developed prominent tertiary characteristics. Not sure it will ever go that route, would expect it to hold on for another few years and then gradually fade away. Excellent. (5660 views)

Very nice nose, immediately after first pour, rich and plummy. Surprisingly tight with solid tannins and bright acid. First taste was still closed and needed at least a good 30 minutes to start opening up. Subsequent tasting 6 hours later, the wine emerged full bodied and opulent. Cedar plum jam with long finish and good weight. Extraordinary after 16 years of age, could easily be aged another 3-5 years without any problem, probably up to another 8 before peaking. Initially this seemed a bit closed but after a few minutes - wow - this smells soooo good. Can hardly believe this is nearly 15-years old. Plenty of boack/red fruits still. Licorice, hints of leather. Medium tannins - I would guess 5 years at this stage. Black cherry, smoke? 30-second finish. Over time, the palate seemed to go away a bit - it thinned out and the fruit got compressed. If not for this, it would have warranted a couple more poiints. Damn, this is good! (4779 views)

wow!!! what an incredible experience. the first hss i've ever had with some age on it. from the initial color it is hard to believe that it is 13 years old. a very dark blood red with a slight bit of bricking. on the nose a beautiful array of chocolate, blackberries, cassis, a hint of spice and cigar box. in the mouth it was like velvet butter, it was that smooth. i can't find enough descriptors to explain how smooth and well integrated this wine was. the midpalate was strong and the finish went on and on and on.
