Tasted by Mr. HT on 12/25/2018 & rated 90 points: Decanted 1 hour. Medium sediment. Still good! Nice character, berry, vanilla and caramel. Great finish. (681 views)
Tasted by dirk21 on 12/19/2016 & rated 93 points: Superb! Deep and dark delicious wine. Perfect with a beef carbonnade. (1114 views)
Tasted by valecnik on 4/21/2015 & rated 93 points: A textbook Cypher wine in structure, but even more amped. Enormous nose of deep, dark cherry and cassis, plus oak and vanilla. The palate is at least as massive, oozing with ripe dark fruit, but beautifully balanced by a core of raging, tingling acidity. Tannins are refined and smooth, but dominant. Lots of cherry on the finish, and occasional rushes of chocolate-covered espresso beans. A monster, but a delicious monster with grace and sophistication. (1577 views)
Tasted by bjamesclark on 1/24/2014 & rated 89 points: Deep, dark, and opaque with an inky purple color. Showing high viscosity and bright reflections.
On the nose deep concentrated aromas of roasted plum, cassis, and dark cherry that are seasoned with spice, toast, vanilla, cedar, toffee and mocha. Aromas are moderate + with a touch of heat even after decant.
Whoa... the palate offers up dense, super-ripe fruit and a supple mouthfeel. Flavors of fig, plum, dark cherry reduction, cassis, toffee, toast, mocha, flowers, and spice are bold. Acidity and tannin levels are both moderate, the mid palate density is moderate and the finish is moderate+ in intensity and length with dark berry and espresso flavors. Needs time for all the components to come together a little more harmoniously, as of now slightly disjointed. (2137 views)
Tasted by BigSchmove on 12/26/2012 & rated 94 points: This was banging. This was big bold and chewy. Very nice long finish. From the first sip this got better and better. I have on my list to get more later. this was outstanding. I did have it with a steak but very memorable (2487 views)
Tasted by jksgray on 1/25/2002 & rated 92 points: Very big complex wine. We decanted this wine before serving which enhanced its flavor. Enjoyed from first to last sip. (1866 views)

2009 Cypher Winery Slayer

(Wine Club notes Fall 2012)

Malbec 48%, Petite Verdot 48%, Cabernet Sauvingon 4%

Alcohol 14.8%
pH 3.80
Total Acid 0.70
Cases 190

NOSE: Deep, rich red berry fruit with forest floor, cedar and mocha creme brulee.

MOUTH: Deep red and black berry fruit wit rich earth and mushroom. Red currant and dark cassis are long on the palate as the velvet tannins bein to caress your mouth. Finish with silky tannins and a savory vanilla cream laced with hints of cassis.

From the depth of my imagination came the desire to make an extreme Bordelaise wine from the Central Coast of California. ... Of the Bordelaise varieties Malbec and Petite Verdot are vey well suited to our microclimates and soils. The Malbec tends to be very similar to Argentinean Malbec due to the cooler climate of the Santa Margarita Ranch in the Southern part of the Paso Appellation. The Petite Verdot is from the warmer area of Paso as it helps build the chewy velvet tannins. The Cabernet Sauvignon ... is also from the Sant Margarita Ranch cropped extremely low to focus the concentration and get true physiological ripeness to avoid any vegetal character. ... We aged teh wine in 100% new French oak for 24 months to reach full maturation.

USA

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.

California

2021 vintage: "Unlike almost all other areas of the state, the Russian River Valley had higher than normal crops in 2021, which has made for a wine of greater generosity and fruit forwardness than some of its stablemates." - Morgan Twain-Peterson
