Very fine bead, pear, apple, yeast and mineral nose. The palate is delicate, light and lifted, fine acidity buoys the vibrant citrus infused pear, apple, and apple skin flavors, along with almond cream, yeast, and a long finish. So nice. 92+pts. Disgorged 12/2011...so 4 years of additional bottle age. 9 g/L dosage. Malo blocked in this cuvee.
Remember, this wine is aged in oak, and this definitely impacts the flavor profile.
Today, the wine is better after having been opened a day and re-corked.
Fine, constant stream of bubbles.
Nose is lively, with cinnamon, red apple, lemon/lime, creamsicle, and chalk.
The palate is full in body, with quite lively acidity, and relatively bold flavors of red apple skin, cooking spices, pear and lemon, vanilla, and honey. Even through all these abundant flavors, the soil signature is apparent (way more so on the 2nd day than the first). The wine shows it's pedigree and lives up to it's expectation, finishing long and full, with a definite acid cut at the end of the lingering finish, earning points for style and grace.
A real beauty, drinking utterly refined and perfect on the 2nd day the bottle was opened...making me think this disgorgement may continue to improve with another year in the bottle, and drink at it's apogee through 2020+. Delicious. (2480 views)

 Tasted by Rieslingfan on 4/17/2015: When I opened this on Friday night I thought it had been in the cellar for about 8 years. Turns out I had bought it 11 years ago. What a fantastic surprise this was. The flavors were full and rich, with lots of fresh nuts, wheat toast and bright apple. The mouse was still very vibrant, and the finish was fresh and persistent. This was even more of a pleasant surprise looking at the old $39.99 price sticker! (2446 views)

(NV Vilmart & Cie "Cuvée Grand Cellier" Brut) ($79.00) 50% ’08, and 25% each ’07-’06. 70%PN/30%CH. Disgorged 4/10. The wine has always been excellent, but it used to be more starched and not entirely knit, and now it’s silkier. This is certainly among the very best of the last fifteen years, with the clinging flower of ’08 and the warm, honeyed ’06 dancing in graceful counterpoint. Mirabelles and apple sauce against lavender and wisteria, a little more springy than usual, with a refined, incense-y finish.

Champagne Blend

The typical champagne blend is of three grapes - Pinot Noir, Chardonnay, and Pinot Meunier. Wines labeled as 'Blanc de Blancs' are by definition all Chardonnay, and wines labeled as 'Blanc de Noirs' contain Pinot Noir, Meunier or both in the blend.

There are how ever three additional grape varieties planted (Arbane, Petit Meslier and Pinot Blanc) and used in Champagne, they could be called legacy grapes and do not represent significant portion of the grapes used (<0.01%?). It is not permitted to plant more of these varieties.

However, sparkling wines that are not Champagne (i.e. not grown in the area legally allowed that name in France) may be made of several other grapes, too. For example, Markko Vineyards 'Excelsior' was given the name 'Champagne' with tongue-in-cheek, as the winemaker has embarked on a program to educate his consumers away from the use of the 'C' word. This wine is actually made like many German Sekts, from Riesling.

France - When it comes to wine, France stands alone. No other country can beat it in terms of consistent quality and diversity. And while many of its Region, Bordeaux, Burgundy and Champagne most obviously, produce wine as rare, as sought-after and nearly as expensive as gold, there are just as many obscurities and values to be had from little known appellations throughout the country. Sub-Region:

Champagne - The French region of Champagne (including the cities of Rheims, Épernay, and Aÿ) was the first region in the world to make sparkling wine in any quantity. Today, the name of the region is synonymous with the finest of all sparkling wines, and wine-making traditions of Champagne have become role models for sparkling wine producers, worldwide. Surprisingly, the region of Champagne is now responsible for only one bottle in 12 of all sparkling wine produced. Styles of champagne range in sweetness ranging from an extra brut or brut 0, to the basic brut to demi sec to doux; some houses produce single vintage champagnes and others produce non-vintage (or incorporate wines/grapes of multiple vintages), often to preserve a specific taste; combinations of grape varietals; and colors, including a rosé. There are several sub-appellations, including the Valley of the Marnes river running from Épernay west, Massif de Saint-Thierry north and west of Rheims, Valley of the Ardre, the Mountains of Rheims (between Rheims and Épernay), Côte des Blancs, Côte de Sézanne, and Côte des Bar in the South. Champagne wine only uses three grape varietals (cépages): Chardonnay, Pinot Noir, and Pinot Meunier.
