A truly interesting, complex and lovely wine. Delish with seafood pasta, or even a mustard-crusted pork loin. Would also hold well with a cheese plate. We expect them to be sharp and well defined, and this is no exception to that, but may be a little lacking in the fruit department. This one probably is a touch less complex and more acidic. It makes your mouth pucker pretty bad, as the acid raises straight to the top of the mouth, leading me to believe it lacks some of the structure necessary to hold it together deeper into the palate. I don't think there is any malolactic fermentation. Completely stainless. More high handed acid on the finish. Really liked the wine. Came home and found it was King Estate, with a nod: I had been impressed previously with King Estate PG Signature. I did not take notes except to note my contentment, how well Acrobat went with my halibut, and to buy for my cellar. On night 2, the white peach, lime zest and zingy acidity were front and center - the wine also fleshed out a little. At only 12,5% abv, this is a lovely, balanced and very feminine Pinot Gris. Wines made from the Pinot gris vary greatly and are dependent on the region and wine making style they are from. Alsatian Pinot gris are medium to full bodied wines with a rich, somewhat floral bouquet. They tend to be spicy in comparisons with other Pinot gris. While most Pinot gris are meant to be consumed early, Alsatian Pinot gris can age well. German Pinot gris are more full-bodied with a balance of acidity and slight sweetness. In Oregon the wines are medium bodied with a yellow to copper-pink color and aromas of pear, apple, and/or melon. In California, the Pinot gris are more light bodied with a crisp, refreshing taste with some pepper and arugula notes. The Pinot grigio style of Italy is a light-bodied, often lean wine that is light in color with sometimes spritzy flavors that can be crisp and acidic. Although this wine can be very sweet, it will begin to lose its acidity when it is nearly ripe.
Pinot gris is considered an "early to market wine" that can be bottled and out on the market within 4–12 weeks after fermentation.
