Wow, this was the best bottle of H Billiot Rose NV I had to date. I took it to a good BYOB sushi place and it was singing. Notes are from memory.
- The palate on this was outstanding. It is a richer (but dry) style of Rose. The flavors of strawberry, red cherry and raspberry were bound together with excellent acidity. The flavors were not 'candied' versions of the fruits but the fruits themselves. If the acidity was lower it would be more flabby but the structure was very balanced. All the elements were integrated very well.

For a rich rose style that is still dry it's hard to beat this one. I only wish I had a few more bottles ... (1185 views)

Tasted non blind.

Salmon color in the glass, clear looking throughout with tiny, steady beading. Nose of cherry, apple, pear and light spice notes. Flavors of cherries, apples and pears. Bright acidity, full bodied. Drink or hold. (1024 views)

Taste: Medium/full bodied with medium+ acidity. The feel has a fatness to it with red fruits, red cherries, baking spices, minerals, and a bit of citrus. The acidity is on the crisp and refreshing side.

Overall: This is a beautiful Rose. There is a fatter quality to it while still having a freshness on the nose and palate. (947 views)

 Tasted by KeithAkers on 3/28/2014 & rated 92 points: Nose: The nose is well rounded and perfumed with red fruits, citrus, red berries, roses, cherries, and a touch of warm dough. There is an excellent red fruit core to the nose with good depth too.

Taste: Medium/full bodied with medium+ acidity. The acidity is refreshing, but very present, with red fruits, citrus, red berries, roses, warm dough, and a some hints of mineral notes on the back end.

Overall: This was a 7/13 disgorgement. There is a real good fatness and polished quality to it. This is a lovely Rose bubbly that is consistently great. (2120 views)

On the nose nice integrated wild berries, strawberry and raspbarry.
Nice and good acidity (the acidity was perfect to balance the food), strawberry, raspbarry but also a hint of minerals and forest. medium lenght and a nice and good balance.

Disgorged 1/11 and showing explosive fruit; Billiot rosé after a month in the weight-room, and even with 9-10g/l of RS it seems drier than earlier renditions. Plumper fruit perhaps? This has nowhere to go but up.

Champagne Blend

The typical champagne blend is of three grapes - Pinot Noir, Chardonnay, and Pinot Meunier. Wines labeled as 'Blanc de Blancs' are by definition all Chardonnay, and wines labeled as 'Blanc de Noirs' contain Pinot Noir, Meunier or both in the blend.

There are how ever three additional grape varieties planted (Arbane, Petit Meslier and Pinot Blanc) and used in Champagne, they could be called legacy grapes and do not represent significant portion of the grapes used (<0.01%?). It is not permitted to plant more of these varieties.

However, sparkling wines that are not Champagne (i.e. not grown in the area legally allowed that name in France) may be made of several other grapes, too. For example, Markko Vineyards 'Excelsior' was given the name 'Champagne' with tongue-in-cheek, as the winemaker has embarked on a program to educate his consumers away from the use of the 'C' word. This wine is actually made like many German Sekts, from Riesling.

France - When it comes to wine, France stands alone. No other country can beat it in terms of consistent quality and diversity. Sub-Region:

Champagne - The French region of Champagne (including the cities of Rheims, Épernay, and Aÿ) was the first region in the world to make sparkling wine in any quantity. Today, the name of the region is synonymous with the finest of all sparkling wines, and wine-making traditions of Champagne have become role models for sparkling wine producers, worldwide. Surprisingly, the region of Champagne is now responsible for only one bottle in 12 of all sparkling wine produced. Styles of champagne range in sweetness ranging from an extra brut or brut 0, to the basic brut to demi sec to doux; some houses produce single vintage champagnes and others produce non-vintage (or incorporate wines/grapes of multiple vintages), often to preserve a specific taste; combinations of grape varietals; and colors, including a rosé. There are several sub-appellations, including the Valley of the Marnes river running from Épernay west, Massif de Saint-Thierry north and west of Rheims, Valley of the Ardre, the Mountains of Rheims (between Rheims and Épernay), Côte des Blancs, Côte de Sézanne, and Côte des Bar in the South. Champagne wine only uses three grape varietals (cépages): Chardonnay, Pinot Noir, and Pinot Meunier.
