Very wide range of aromas out of the glass.. and on the broad palate: chocolate („Toblerone“ to be precise (if you know the swiss touri creation)), plums, ripe cherries & apricots, figs, roasted almonds and honey. The age added tertiary notes of forest floor and champignons… Decent and elegant, long but not massiv. (313 views)

At 30 years old, this wine exceeded my expectations and goes to show that good bones will always stand the test of time. Rich, honeyed notes of poached apples, grilled pineapple, almonds, macadamia, marigold, and salted butter on sweet brown bread; with time, a touch of oceanic minerality crept in, along with crushed shells. Perfectly balanced on the citrusy palate. The wine had gone flat, as Dom tends to do with age, but the acidity was so spot on that I didn’t even miss it. A glorious example of aged Champagne from a reputable producer. (265 views)
 Tasted by Jonathan T on 3/25/2024 & rated 98 points: Generously shared by my friend Paul, this is the greatest champagne I've ever tasted. Amber in color, the aromas and flavors are unlike any I've ever experienced in a Champagne. I've only had a couple of old white Burgundies with characteristics similar to this. Notes of fresh honeycomb, sea salted butter on sourdough, butterscotch. The finish reminds me of a creamier, nuttier cheese with a mellow richness (mimolette comes to mind). What was once a lemon citrus has evolved into tropical fruits (passion fruit, grilled pineapple, kumquat). While the wine has lost its bubbles, and there's less tension of youth, there is still a vibrant acidity that almost gave the illusion of fine bubbles. Hard to describe. But aren't all great wines? The gas is pretty low and also the mousse, Im guessing this bottle is at its peak and should be drink ASAP. Maybe 1993 was not the best year for long term storage.

This bottle should been opened like 5 years earlier and reached a higher score 90+ due to increased gas and mousse. (892 views)

 Tasted by Doubleten on 5/5/2023 & rated 95 points: First in the lineup of our wine group dinner. Paired with shellfish to start the meal. Slightly dark, pale, yellow color with tiny bubbles. A late harvest type of character and tropical fruits on the nose. Buttery, with wonderful notes of caramel and a hint of truffles. The wine should be drunk quickly, as it became flat after 30-45 minutes, at which point it transitioned to a glorious glass of white wine. A memorable experience. (2570 views)

Opened it for an anniversary.

Summer evening, just after sunset, in the African bush listening to Hippos calling at the waterhole. It could not have been better.

Golden yellow colour, healthy amount of fiz. Yeasty, brioche nose.
On the palate the yeasty nose, lemony notes and long flavour all came together. (2626 views)

 Tasted by Papies on 4/16/2022 & rated 95 points: It’s been 4 years since we crossed paths with this understated beauty ( Papies 95-96) and we could not resist its siren call off the bible sized wine list at Geranium, Copenhagen.
And the smile of the sommelier upon tasting this set us off in the right path. Granted at this age and this not super vintage bottle variation is a worry, mostly due to storage and provenance , but here we felt the risk was justified. Superbly aged, yet still bright in colour and glossy, the nose has a lot of evolution and even a truffle edge and the nose was indeed once again the highlight. Still alive on the palate of course and albeit almost 30 years old this is a super and often overlooked vintage. Easy 95 here (4137 views)

Light yellow color in the glass, clear looking throughout with tiny, steady beading. Nose of sea foam, lime spritzer, Camphor and mixed yellow fruit. Flavors of lemon spritzer, Granny Smith apples and toast. Medium to bright acidity, full bodied. Drink or hold. (3382 views)

Still have considerable healthy bubbles. Shinny golden amber color. Enchanting aromas of lemon zest, green herbs, toasty, smoky, roasted walnut, yeasty and honey.

Classy and luxurious mouthfeel, round and expansive with a nervy acidic backbone. Focus and precise with juicy lime, exotic fruits, chalky and savoury minerals all mingling and balancing with the just well developing tertiary honey, nutty and hint of mushroomy flavours. This is very fine and could easily last for another decade. (2728 views)

 Tasted by acyso on 11/2/2019 & rated 93 points: Nebbiolos, white truffles, Volume IV (Chicago, IL): A very mature Dom, this has a little bit of that weirdness you get from aged reduction and a distinct coffee note as well. It feels more autolytic and yeasty than Dom usually is. There's a little vein of sweetness that sticks out on the palate too. I'm not sure what to make of this as far as the vintage goes because I can't think of any other 1993 champagnes I may have tasted prior. Nonetheless, it's an enjoyable glass of wine, but I'm not sure I'd be interested to drink more than that glass. (7974 views)
 Tasted by jnewman77 on 8/5/2019: Bottle shared by a friend; original release; initially when I opened this there was no pop or escape of air and I was concerned it may have been flat; there was however a lovely creamy mousse; the nose was stellar and complex; creme brûlée, toasted hazelnut, brioche, baked apple, and dried floral notes. Certainly a little bit oxidative, but in a positive way for me. The palate was so creamy and delicious; the acidity fading and the bubbles very gentle, it just felt fabulous. A really enjoyable wine to try and at this point the oldest bottle of Champagne I've tasted. (6735 views)

Quite good, but frankly I don't understand the value of premium champagne. If it's my own money, I'm buying a prosecco at 1/10th the price. (5874 views)
 Tasted by BenBlu on 2/24/2019 & rated 94 points: I was wondering how this would show. Better then expected is the short version. The host remarked that this bottle was fresher then the last. It had some great aged DP funk on the nose. Dosage felt in the higher side with grapes that probably were not quite that ripe. For some reason it reminded me of the 1983 in that it is not a fat expansive “Batard” like Dom but more on the leaner side. Great experience but surely this is at peak and nothing gained from further cellaring from standard bottles. (4231 views)

France - When it comes to wine, France stands alone. No other country can beat it in terms of consistent quality and diversity. And while many of its Region, Bordeaux, Burgundy and Champagne most obviously, produce wine as rare, as sought-after and nearly as expensive as gold, there are just as many obscurities and values to be had from little known appellations throughout the country. Sub-Region:

Champagne - The French region of Champagne (including the cities of Rheims, Épernay, and Aÿ) was the first region in the world to make sparkling wine in any quantity. Today, the name of the region is synonymous with the finest of all sparkling wines, and wine-making traditions of Champagne have become role models for sparkling wine producers, worldwide. Surprisingly, the region of Champagne is now responsible for only one bottle in 12 of all sparkling wine produced. Styles of champagne range in sweetness ranging from an extra brut or brut 0, to the basic brut to demi sec to doux; some houses produce single vintage champagnes and others produce non-vintage (or incorporate wines/grapes of multiple vintages), often to preserve a specific taste; combinations of grape varietals; and colors, including a rosé. There are several sub-appellations, including the Valley of the Marnes river running from Épernay west, Massif de Saint-Thierry north and west of Rheims, Valley of the Ardre, the Mountains of Rheims (between Rheims and Épernay), Côte des Blancs, Côte de Sézanne, and Côte des Bar in the South. Champagne wine only uses three grape varietals (cépages): Chardonnay, Pinot Noir, and Pinot Meunier.
