But I was pleasantly surprised with dark berry fruit and chocolate on the palate. The tannins have mellowed and it has a long finish on mid palate. Justin never disappoints. (5697 views)

 Tasted by joncohen on 5/26/2013 & rated 90 points: Opaque purple, v little bricking; light in the glass, but clinging to the edges with long legs. On the nose: tarry oak, black cherry/raspberry fruit, vanilla, a more subtle bell pepper component. On the palate: initial hit of big red fruit (raspberry, blackberry), with plenty of vanilla/oak flavors before mid-palate acidity emerges, then some coffee and cigar box notes that linger for a medium long finish, over which the dark fruit reasserts itself at the back of the throat. Label says 14.5% alcohol, though from the extraction I would have guessed more. Tannins semi-decently integrated, but I daresay this could have gone a few more years in the cellar while they continued to soften up.
No doubt about it, this is an archetypal big CA cabernet, doing exactly what those wines are supposed to do. I don't go for this style every day, but sometimes you want a 800 lb gorilla to go with the rib-eye steaks you're throwing on the grill; on those nights, you could do a lot worse than this bottle. Waited about 30 minutes before consuming and opened with slight tannins and hint of black cherry and chocolate. Fortunately, saved one glassful and drank after just ove an hour wait time. Color was still nice, dark fruit flavors were more pronounced and finished with spice, mocha and oak. Drink up by 2014. (4881 views)

After over a year of avoiding the matter, Monday seemed like the perfect night for a throw away bottle. Turned out to be the little wine that could. Rasperry nose with a little of bit of brambles. Not very complex but nice, rich black currant with some spice and earth. This would make a fine steak-night or party Cab. Pleasantly surprised. (4481 views)

(JUSTIN CABERNET SAUVIGNON) #1; COLOR-dark; NOSE-really enjoying the subtle Bacon Fat component coming through underneath a very ripe black raspberry; beautiful integration of Vanilla extract; pretty floral action as well; TASTE-great mouthfeel; beautiful on the attack; really enjoying the mid-palate because transitions beautifully to a dark sour cherry component w/ some shaved white chocolate on the finish; really nice; well-made; good firm tannins; a little fruit bombish, but it's a controlled chaos; great w/ steaks; good drinking wine as well; GV-90  90 points

"Our 2005 Cabernet Sauvignon is jet black with a light red rim. Aromas of black cherry, plum and an assortment of spice, vanilla and toasty oak are prevalent on the nose. A soft, fruit forward entry evolves into a lush, opulent mouth feel filled with black fruit, earth and spicy characters. Hints of caramel and cedar combine with a soft, velvet texture on the finish." -Winery

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
