 Tasted by Elkcims on 11/5/2023 & rated 97 points: Double decanted, filtered and slo-ox for 30 minutes and drank over 3 hours. Medium to full bodied, blackberry, black cherry, cassis, chocolate, tokalon spice. Vibrant freshness, with noticeable yet supple tannins giving way to a polished silky finish. Paired well with roast leg of lamb. Purchased from Brentwood/Benchmark last year - cork and fill were perfect. (341 views)

 Tasted by Benoit Hardy on 7/22/2023 & rated 94 points: Extremely rich nose which expresses all the Californian exuberance but which remains at the same time on a very Bordeaux classicism: bright black fruits, graphite, cherry brandy, elegant oak and earthy aromas.

The palate is much finer and more tactile than the nose suggests. Silky touch, dense juice but worked more on the length than on the intensity in the mouth. There is a nice acidity and we quickly forget the 14.7° of alcohol because the wine turns out to be sapid. It's complex, peppery and earthy. However, the wine does not have the depth that impressed me on the To Kalon 2002 from Schrader that I drank last year. It is built on finesse, with a beautiful finish, explosive on black fruits and cedar, on a salivating and saline length.

 Tasted by RockinCabs on 7/3/2023 & rated 97 points: This wine was consumed over two nights in a To Kalon Horizontal/Vertical of BTK from different producers and different vintages. The Hobbs was a standout.

Nose: Layers and layers of blackberry, black cherry, blueberry, eucalyptus, tobacco, cigar box, and green pepper. Just a gorgeous dark fruit and classic To Kalon spice notes.

Palate: This is a massive and graceful wine with some patina of age setting in. This is in a great place now with an elegant silky palate feel that impresses with black cherry, dark fruit, mint, spice and sweet plum and berry notes. Hints of ginger root, crushed herbs and anise. Very well balanced.

Finish: This is a very long finishing wine with an inner mouth perfume that enhances the whole experience. Dark fruit and a beguiling array or tobacco, anise, leather, allspice and cassis in the finish.

This is an astonishingly good To Kalon Cabernet. Every one of the great markers of the vineyard that you want is there, and the silky texture, deep fruit, nuanced spice and mint notes are in perfect balance. A masterpiece from Paul Hobbs (623 views)

Taste; this is a big wine wait no this is a VERY big wine. Dark fruit, cassis, with a long finish and no tanins. I LOVE THIS WINE.

On the palate, abundant mouth filling red fruit, more alcohol, oak, mineral, black pepper in the finish. This is a hefty CA red, no doubt about it. Amazing density, intensity, and complexity, consistent with my previous notes. A wine you could eat with a fork, blackberry and blueberry pie, wrapped in mineral, underpaved with asphalt, and other earthy notes besides. Mom and Peter enjoyed this with barbeque pulled pork, garlic horseradish mashed potatoes, and kielbasa. The wine was delicious just after opening, but for me seemed to reach its peak after 1-2h in a decanter. (1772 views)

 Tasted by Djfermentation on 9/10/2019 & rated 97 points: It’s rather bittersweet to say goodbye to this Cabernet. It was absolutely terrific and not showing any signs of being tired. Probably still on its way to a peak in the future but quite beautiful now. Plenty of velvet glove power with wonderful finesse. Lots of nuance that kept bringing us back for another sniff and sip. We took this bottle which we cellared for 14 years l, to PRIME tonight in LV. It went surprisingly well with the tomatoe salad and beet salad as it paired well with the mint in the beets. It was also, no surprise, terrific with the short rib. So food friendly after 30 minutes of air and wonderfully drinkable. Enjoy now or cellar for several more years. Phenomenal juice!!! (1876 views)

This medium plus bodied wine was a joy to drink. It showed layers of dark red fruit, some blue and black fruits, some dark chocolate, with very soft & integrated tannins, in a juicy acidity that kept it lively. Can probably hold for several more years, but will not improve much, so enjoy them now. (2095 views)

The palate is dominated by extracted red fruit, graphite, faint hints of oak, and a long lingering finish. Superbly well balanced, no rough edges. Hedonistic and posh. Perfect to swirl, sip, and meditate with food, tonight ribeye followed by chocolate soufflé for dessert. Outstanding! (2366 views)
 Tasted by MC2 Wines on 5/19/2017: Zachys May Auction (Smith & Wollensky (48th & 3rd Ave)): Wow is this an intense wine. It's basically like blackberry/blueberry jam in a glass. No real acidity to speak of. I thought the Maya was hedonistic but this goes to a whole different level. It's the kindof wine that if kids drank wine they'd love. A touch alcoholic though. There's a time and place I think for this, but for me it was nowhere near the '05 HA. (2699 views)

 Tasted by capacious on 10/31/2015 & rated 93 points: Big, no - huge, now beginning to evolve, still purple dark, but perhaps some secondary notes, very well built wine. My only complaint is my usual complaint. I feel like this could be any of ten or twenty well made Napa wines. Readers are probably tired of my saying that and might reasonably say- capacious- why do you have so many if that's how you feel. The answer is we didn't think or really taste this way until perhaps the last three or four years. The more different Bordeaux, Burgundy and Italian wines of all regions we have, the more clear it is how terroir matters. Ok probably most have stopped reading by now and I won't do this tirade again. And yes, I didn't discover terroir. But some things you can talk about and know about, and then they finally become truly meaningful. The same good again and again can sort of bore. (3415 views)

This wine turned out to be beautiful and easily the WOTN. Load of blackberries, raspberries and cassis. Surprisingly very fruit forward for an older wine. Most wines this age begin to show signs of tiring. Everyone commented on how fresh and wonderful this wine was for our holiday party. This is a great extracted style of winemaking that gives me hope for some of the fruit bombs of Napa will age gracefully. Very pleased with this wine. (3505 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

Beckstoffer To Kalon continues to receive worldwide accolades for its wines, particularly in the last decade. The vineyard is on a gentle slope on the western foothills of the Oakville appellation. Soils are Bale loam/Bale clay loam, and are impeccably farmed by Andy Beckstoffer’s team.
