 Tasted by AGELVIS on 5/25/2022 & rated 94 points: Two hour decant. Very very deep magenta color (little sign of age). Black cherry, black currant, crunchy peanut butter, subtle mushroom and frankincense on the nose. Smooth and very dry palate, with coarse, pixelated acidity. Soft, but very present tannins on the longish finish. (1297 views)

 Tasted by Eagle13 on 4/8/2017 & rated 91 points: This wine was yummy after sufficient decanting. I followed the information shared by recent consumers in this forum. My wife and I had reservations at Hawk's in Granite Bay at 7:15. I popped this wine at 5:15 to decant. At 6:30, I transferred the wine back into the bottle and replaced the cork. After reopening at the restaurant, it was decanted another 40 minutes for a total of just about 2 hrs. This wine was elegant and ready. The tannins had smoothed out indicating the near end of the improvement though aging process. A good partner with my rib eye steak and her short ribs. (2532 views)

 Tasted by davidandrose on 1/7/2017 & rated 90 points: Decanted half the bottle. As initial taste was thin with faint green notes, I then allowed the decanted wine to rest for 30 mins then followed over 90 mins; balance of the bottle had 2-3 hours of air.
First experience with this winery/bottling. Extremely fine, deep purple sediment around the edge of the bottle when uncorked. First tried out of Somm stems, but these made the wine seem too thin and simple; transferred to standard Cab stems which added some weight to the wine.

Cigar, tobacco and dark tea give the nose a deep, rich aroma. Wine has a lingering grip on the stems when swirled. Mouthfeel at 60 mins shows dark fruits, tobacco, faint cedar and well-integrated tannins. As time reaches beyond 2 hours the wine loses complexity and becomes more one-dimensional. Nice offering early-on; if I had any more (which I don't) I'd uncork, let it breathe for 45 mins, then enjoy over the next 60-90 mins. But its time to drink up IMO (1819 views)

J. Davies Cabernet Sauvignon Diamond Mountain

The Davies family, proprietors of Schramsberg Vineyards in Napa Valley, presents its Cabernet Sauvignon produced from the historic Diamond Mountain vineyards they purchased in 1965 and replanted to Bordeaux varietals beginning in 1994. The wine is named in honor of patriarch Jack L. Davies, who along with his wife, Jamie, revived the Schramsberg property and established the preeminent American sparkling wine house 50 years ago. A creation of the next generation of the Davies family, the J. Davies Cabernet Sauvignon is the product of an intimate knowledge of a place and a passion to create a delicious red wine.

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
