Nose of spices, dark herbs, a little smokey wood, and distant funk. Palate finds all of these elements blended well with a solid tannin base that isn't overpowering (was very different after only 2 hours). There's a rich dark chocolate layer that layers a broad bittersweet level. This wine is bold yet elegant; sturdy without being too aggressive. Mostly opaque plum color. Misplaced my original notes. This is a balanced wine featuring black fruit with a nice supporting streak of minerality, hints of licorice. Nice acidity for a Cali Cab, which lends lift to a full bodied wine and helps integrate the oak. Extremely good for a Cali Cab at this price point. Was convinced I'd love this based on the nose. Unfortunately the fruit on the palate is subdued compared to the nose - there's a nice transition to leather on the midpalate, but from there the acidity really takes over. I'm ordinarily a fan of high acid cabs, but this was just too much for me. There's a lot going on in this wine that I like, but it's way out of balance. I'm a little concerned this may have been a flawed bottle so will hold off rating (would have been around 85). It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.
Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace.
