  • 1996 Salon Champagne Blanc de Blancs Brut 95 Points

    France, Champagne

    Fantasic wine. A very pale straw colour with a fast and persistent stream of very fine bubbles. Expresive and really quite chalky nose that gradually opens up to show slightly creamier and more honeyed notes. Very precise and effortlessly elegant on the attack and across the mid-palate. Minerally, and long with great line. Whilst oviously having good 96 acidity and great focus, this is softening and showing more floral and honeyed notes on the palate too. Just lovely. Years of development in this, but a wonderful wine at present. *****

Halibut ceviche with avocado, keta, tempura baby squid and radish

  • 2006 François Raveneau Chablis 1er Cru Butteaux 91 Points

    France, Burgundy, Chablis, Chablis 1er Cru

    Quite a full mid straw with touches of green. Relatively ripe and rounded nose, some chalkiness but more floral and fruity, though not as overt at the 06 Montee de Tonerre seems to be at the moment. Quite full on the palate and a little more restrained than one might have supposed from the nose. Good weight and length and very enjoyable but for me just a shade behind the slightly more mature Fevre 01 Vaudesir alongside it, that wining on Chablis typicity. ****

  • 2001 Domaine William Fèvre Chablis Grand Cru Vaudésir 92 Points

    France, Burgundy, Chablis, Chablis Grand Cru

    Slightly darker straw yellow than the 06 Rav But alongside. More Chablis-like nose, showing restraint but a touch of iodine and chalkiness. Starting to show signs of maturity, this is nicely structured with a straw-scented moderately minerally mid-palate. Nice shape and control and certainly as minerally as the Raveneau, but this is more restrained and classic though it could do with more bite and persistence. Lovely though. ****

Under blade fillet with bone marrow, salad, triple cooked chips and béarnaise

  • 1964 C.V.N.E. (Compañía Vinícola del Norte de España) Rioja Viña Real Reserva Especial 95 Points

    Spain, La Rioja, La Rioja Alta, Rioja

    Full bottle. Quite a dense, dark ruby.Very full and plush with a properly red fruited, slightly savoury and orange-peel nose. This follows through to a surprisingly full palate that is showing a little more weight and depth than my previous experience of this wine that was in a half bottle. Incredible youth for its age. Holds and develops in the glass beautifully over the 90mins or so in glass. Gorgeous and very complex and complete. *****

  • 1966 C.V.N.E. (Compañía Vinícola del Norte de España) Rioja Imperial Gran Reserva 93 Points

    Served alongside the 64 Real Res Esp this is a little less elegant, more savoury and a little less complex. A denser more savoury palate with beef and soy notes that morph into leather with some spice and a touch of rust with air. Full and complex and engaging but it lacks the flair and joie de vivre of the 64. Lovely wine though and in great condition. ****

    Spain, Andalucía, Manzanilla de Sanlúcar de Barrameda

    Nice caramel brown in the glass to deep orange at the rim. Fragrant, lifted nose of caramel, toasted nuts and spice with a sweetness around the edges - very Cognac-like without the spirit. Dry and rich and nutty on the palate, very long and very complex. A serious wine. ****1/2

Banoffee tartlet with mascarpone, macadamia and valrhona chocolate

    Hungary, Tokaji

    Deep golden amber. Rich on the nose with barley sugar andzesty orange on the nose. very sweet and rounded on the atatck with lovely balancing acidity through the mid-palate. Long fnish. Very harmonios. Not especially complex but this is very refined and elegant and smooth. ****
