Introduction

Seven us brought some of our best burgundies, and very lovely they were too. The reds were surprisingly similar, all showing red fruits, silky textures and exhibiting a restrained grandeur.

Flight 1 - with pig's head croquettes and gougères (1 Note)

Flight 2 - with Crab raviolo, samphire, brown shrimps, fondue of leeks and bisque sauce (3 Notes)

Flight 3 - with Chargrilled Englsh veal rump, violet artichokes, aubergine caviar, crisp brain, gremolata and roasting juices (3 Notes)

Flight 4 - with Roast mallard, confit leg, buckwheat pancakes, beetroot, star anis and pear (3 Notes)
