Introduction

Mark sent out an email a few weeks earlier saying that he had a reservation for 6 and if several of us wanted to join. The answer was an easy yes as this is one of the hardest reservations to get in our fair city. The best part is that you are getting 1* food and it's BYO.

Flight 1 (10 Notes)

  • 2004 Jean Milan Champagne Terres de Noel Blanc de Blancs Brut Grand Cru 91 Points

France, Champagne, Côte des Blancs, Champagne

Nose: Nice and pristine nose with tones of green apples, pears, roasted nuts, acacia flowers, and a touch of baked bread tones.

Taste: Medium bodies with tart medium+ acidity. The acidity is certainly noticeable along with crisp tones of green apples, pears, white fruits, and baked bread.

Overall: This seems to be in a middling phase right now. It's still a really nice bubbly, but it could probably use some sleep time before it fully emerges.

  • NV Vilmart & Cie Champagne Grand Cellier Brut 91 Points

    France, Champagne

Nose: There is a delicious quality to the tones of red apples, baked bread, tree fruits, pears, and a nice bit of mineral tones as well.

Taste: Medium/full bodied with medium acidity. This is well balanced with tones of red apples, baked bread, pears, minerals, and some baking spices.

Overall: This was a perfect foil to the Jean Milan. It was slightly larger, but without the precision. It shows off the house style well and is a great way to get into Vilmart.

  • 2003 Prager Riesling Smaragd Klaus 88 Points

    Austria, Niederösterreich, Wachau

Nose: This is certainly more upfront, and it's lacking some depth, with tones of green apples, petrol, quince, and spiced pears.

Taste: Medium/full bodied and lacking some acidity that would give it an extra zip. It isn't flabby though, with tones of quince, green apples, and spiced pears.

Overall: This is drinking as well as it can right now. It shows a chunkiness from the vintage, but isn't overdone.

  • 2005 Adega da Cartuxa Pêra-Manca Branco 86 Points

    Portugal, Alentejano, Alentejo, Évora

Nose: There are nice and forward tones of melons, roasted nuts, pears, and some smoke tones as well.

Taste: Fuller bodied, but the acidity is lacking and leaves it slightly hollow. There are nice and balanced tones of melons, pears, and roasted nuts.

Overall: This was lacking some depth on both the nose and palate. It was still a very good and interesting white that paired well with the food.

  • 1999 Domaine des Comtes Lafon Volnay 1er Cru Clos des Chênes 92 Points

France, Burgundy, Côte de Beaune, Volnay 1er Cru

Nose: There is some tightness to the nose, but it is also elegant with gorgeous tones of dark red fruits, violets, berries, spices, an red florals.

Taste: Medium bodies with medium+ acidity that is very noticeable. There are good supporting tannins along with elegant tones of dark red fruits, violets, berries, and some spices.

Overall: This had a lot of class and elegance. It's still showing young, but is extremely good right now as well.

  • 2003 Château Pavie 88 Points

France, Bordeaux, Libournais, St. Émilion Grand Cru

Nose: Very big nose with extracted tones of black fruits, black cherry compote, spices, black tar, and cedary oak tones. It's rich, but with depth and a larger quality to it.

Taste: Full bodied, but smoother than I would've imagined with tones of black cherries, oak, spices, and black fruits.

Overall: This is a full throttled wine, but there is a balance in its largeness. While the oak is prominent, it doesn't fully take over the nose or palate.

  • 1997 Domaine Jean-Louis Chave Hermitage 93 Points

    France, Rhône, Northern Rhône, Hermitage

Nose: Very pungent and just as balanced with beautiful tones of black fruits, black cherries, bacon fat, animal hides, and dark florals. There is very good depth with this being very expressive as well.

Taste: Full bodied with medium acidity and good supporting tannins. There is very good depth with expressive tones of black fruits, black cherries, bacon fat, and animal hide tones.

Overall: This was drinking beautifully. There is a lot of balance and poise to it with nice depth as well. Though it doesn't get into that final gear, this is a perfect showing for what Chave brings to the table.

  • 2001 Zind-Humbrecht Pinot Gris Clos Windsbuhl 93 Points

    France, Alsace

Nose: This shows off the richness of the sugar level with tones of warm honey, spices, wild flowers, apricots, and green apples.

Taste: Full bodied with medium acidity. There is a real richness to the tones of warm honey, spices, apricots, and green apples. There is very good depth on the feel as well with some nice layering.

Overall: This was listed as Indice 5. It was certainly showing the residual sugar influence, but also showed the class of the vineyard as well.

    Germany, Rheingau

Nose: Very balanced with mature tones of honey, petrol, pears, and caramel apples.

Taste: Fuller bodied with nice medium acidity that is still showing well. The tones of honey, petrol, caramel apples, and bleu cheese are well layered.

Overall: This is a gorgeous and mature spatlese. It shows off class and layering on the palate. There is a refined nature on the nose as well.

Closing

We came prepared with wine and they didn't disappoint. While the wines showed well on the whole, the food was stunning. I had so much fun that I made a reservation for march before I left.
