Aged meat and Aged Cabs

Introduction

Mark invited several of us over for some aged beef with the theme being aged Cali Cabs for the meat. We got the steaks from Butcher&Larder and naturally got some charcuterie from them as well.

  • 2010 Weingut Willi Bründlmayer Grüner Veltliner Kamptaler Terrassen 89 Points

    Austria, Niederösterreich, Kamptal

    Nose: Fragrant and balanced nose with tones of sea shells, white fruits, minerals, pears, snap peas, and some floral tones. Very good complexity, but it's lacking some depth.

    Taste: Light bodied with medium/high acidity that is very noticeable. The structure is very youthful with crisp tones of sea shells, minerals, snap peas, and floral tones.

    Overall: This was on the young side, but still it's a really good gruner veltliner. There is a real crispness to this and the structure is a bit too much right now.

  • 2002 Domaine William Fèvre Chablis Grand Cru Les Clos 86 Points

    France, Burgundy, Chablis, Chablis Grand Cru

    Nose: Mature and richer nose with tones of wax, lemon curds, spiced pears, and red apples. This was showing itself to be on the decline, but the tones were fully there.

    Taste: Medium/full bodied with medium/low acidity. The palate was a bit flabby with tones of wax, lemon curds, red apples, and some vanilla tones.

    Overall: This was sad when revealed. This was a drinkable bottle, but it was fairly disappointing when seeing how young it should be.

  • 2010 Bedrock Wine Co. Cuvée Karatas 89 Points

    USA, California, Sonoma County

    Nose: There is a real mineral quality to the nose with tones of white fruits, pears, green apples, crushed rocks, and some lemon curds. This is wound a little tight right now, but there is nice depth to this as well.

    Taste: Medium bodied with medium+ acidity. The acidity is crisp and provides a nice spine along with tones of white fruits, pears, peaches, green apples, crushed rocks, and lemon curds.

    Overall: This was hard to pinpoint blind. It did seem on the younger side, but it was also very enjoyable right now too.

  • 1981 Joseph Phelps Cabernet Sauvignon Eisele Vineyard 91 Points

    USA, California, Napa Valley

    Nose: Well balanced and aromatic nose with tones of dark red cherries, cedar, autumn leaves, and some currants. There is very good depth to this with a sense of refinement as well.

    Taste: Medium/full bodied with good medium acidity and nice supporting tannins. The feel is very polished with tones of dark red cherries, cedar, currants, and some soy tones.

    Overall: This was drinking well for a bit. We came back to it later on in the night and it had faded, but it still held up very well for several hours.

  • 1984 Beaulieu Vineyard Cabernet Sauvignon Georges de Latour Private Reserve 92 Points

    Nose: Perfumed and balanced nose with tones of dark red cherries, cedar, bell peppers, american oak, vanilla, and some black currants. There is nice depth and class with a refined maturity to it.

    Taste: Medium bodied with medium acidity and silky tannins. Refined and balanced with silky tones of dark red cherries, cedar, bell peppers, american oak, black currants, and some autumn leaves.

    Overall: This was a real classy and mature California Cab. This hearkened to a previous era of California Cabs and it was drinking well into the night.

  • 1996 Fisher Vineyards Cabernet Sauvignon Wedding Vineyard 92 Points

    USA, California, Sonoma County

    Nose: Very well balanced and aromatic nose with tones of black currants, dark red cherries, licorice, vanilla beans, spice tones, and some perfume tones. There is nice depth with a plushness to the tones.

    Taste: Full bodied with medium acidity and youthful tannins. The tannins aren't overpowering, but provide good support to the tones of black currants, dark red cherries, licorice, vanilla beans, and spice tones.

    Overall: This is a real quality Cali Cab. There is nice depth to it with a richness as well. It was a far departure from the older cabs, but it still showed very well.

  • 1997 Pahlmeyer Proprietary Red 92 Points

    USA, California, Napa Valley

    Nose: Shows a richer side with tones of licorice, dark red cherries, vanilla, smoke, dark red berries, dark red fruits, and smoke tones. There is good depth to the nose, but it is bordering being overdone.

    Taste: Full bodied with silky tannins and medium/low acidity. The tones of licorice, dark red fruits, vanilla, and smoke are on the richer side.

    Overall: While this was on the bigger side, it did hold it fairly well. This did get better with air as it was wound up a bit at first.

  • 1986 Diamond Creek Cabernet Sauvignon Red Rock Terrace 93 Points

    USA, California, Napa Valley, Diamond Mountain

    Nose: Extremely well balanced and aromatic nose with layered tones of dark red cherries, bell peppers, herbs, earth tones, spices, cedar, and a touch of violets. The nose is extremely elegant and it kept gaining in the glass and with air.

    Taste: Full bodied with medium acidity and very good supporting tannins. Very well balanced with deep and layered tones of dark red cherries, bell peppers, herbs, spice tones, and cedar. The feel is very silky with an elegance to it as well.

    Overall: This is another great showing. There is a lot of class and maturity to this and it kept getting better with air.

Closing

This was a fun night. With it just being 4 of us, it made for more time spent with the wines and a lot more conversation. This will have to be done again!
