Wine with the NEXT Chicago Steak Dinner

Introduction

While it is clearly a great steakhouse dinner, more of the courses were white wine oriented, and we were ready. Great dinners with great wines to complement.

Flight 1 - Dinner at NEXT (10 Notes)

  • 1997 Bouchard Père et Fils Chevalier-Montrachet La Cabotte 94 Points

    France, Burgundy, Côte de Beaune, Chevalier-Montrachet Grand Cru

    Popped and poured. Intense floral start with ripe apple and deep Meyer lemon aromas. Similar on palate with an engaging butterscotch element emerging after 15-20 minutes. At a great place now, but this held well for the entire time in glass, so don't think it is imminently declining.

  • 2004 Bouchard Père et Fils Chevalier-Montrachet La Cabotte 94 Points

    France, Burgundy, Côte de Beaune, Chevalier-Montrachet Grand Cru

    Open ~20 minutes before serving. Lots of peach and ripe apple aromas. A subtle floral note to start, that expanded with more air. Very good concentration and density that also seems to expand with more time in glass, this is the best bottle I can recall of this wine, and one that really showcased the vineyard's Montrachet heritage.

  • 1996 Domaine G. Roumier / Christophe Roumier Chambolle-Musigny 90 Points

    France, Burgundy, Côte de Nuits, Chambolle-Musigny

    Tasted double blind. Black and red cherry aromas with some braised meat spice. Very fresh fruit for Villages wine at this age, accompanied by some roasted or braised meat character that made me think this might have been from Gevrey. Very well balanced vs other Villages 1996s I've tried in the past few years.

  • 1985 François Raveneau Chablis 1er Cru Montée de Tonnerre

    France, Burgundy, Chablis, Chablis 1er Cru

    Musty and somewhat earthy to start. Concentrated lingering fruit came through in the middle and end, but never really persisted. One person thought it corked, then a few agreed, but I just think it was earthy and mushroomy and less charming that older Raveneau can be.

  • 1989 Louis Jadot Corton-Charlemagne Domaine des Héritiers Louis Jadot

    France, Burgundy, Côte de Beaune, Corton-Charlemagne Grand Cru

    Popped and poured. Lots of mature stone fruit aromas with good floral and spice support. Very good overall. Slightly more advanced, slightly less concentrated than the best bottles I've tasted over the past few years, but also in no danger of fading away.

  • 1982 Château Pichon Longueville Comtesse de Lalande 95 Points

    France, Bordeaux, Médoc, Pauillac

    Open an hour+ before serving. One of the best showings i can recall for this wine. Lots of dense blackberry and currant with hints of cigarbox and dark roast coffee. Very balanced on palate with an overall fresh, vibrant mouth feel.

  • 1964 Château Cheval Blanc 97 Points

    France, Bordeaux, Libournais, St. Émilion Grand Cru

    Open approx one hour before serving. Incredible mature fruit aromas with great and intense spice to start. Alluring blackberry flavors with mushroom hints and great length to start. Peak performance was between 5 and 20 minutes in glass. Still wonderful an hour later, but 2-3 points less intense or exciting by then. My WOTN for its 15 minutes of greatest pleasure.

  • 1982 Château Cheval Blanc 96 Points

    France, Bordeaux, Libournais, St. Émilion Grand Cru

    Open 1-2 hours before serving. Served immediately after the '64. Another rock start performance for this wine. Lots of ripe black fruit with vanilla, dark chocolate notes. Lots of concentration and power, but also incredibly balanced and elegant. stayed at the same great level the entire time in glass.

  • 1990 Château d'Yquem 92 Points

    France, Bordeaux, Sauternais, Sauternes

    From 375 ml bottle. Similar flavor profile to other bottles from the recent past, with plenty of apricot, peach and some nuttiness, with everything in good balance. Perhaps it was just palate fatigue, but this didn't seem to have the concentration as prior bottles.

Flight 2 - Wine That Came Next (at Gary's) (3 Notes)

  • 2003 Domaine Perrot-Minot Chambertin-Clos de Bèze Vieilles Vignes 92 Points

    France, Burgundy, Côte de Nuits, Chambertin-Clos de Bèze Grand Cru

    Black berries and black currant with roasted meat and game. Very rich and intense in the way you expect from 2003s, but without any overripe character. This has great concentration and enough acidity to maintain overall balance through a very long finish. Good now and I expect even better going forward .

  • 1982 Bruno Giacosa Barbaresco Riserva Santo Stefano

    Italy, Piedmont, Langhe, Barbaresco

    Popped and poured (unfortunately). This bottle kept changing dramatically every 15 minutes in glass. At first it came across as earthy and barnyardy with subtle, mature red fruit. 20 minutes later there were rose petals, licorice and more weighty fruit. 20 minutes later there was an off-kilter wine with too much acidity. Next came a wine with lots of spice and sneaky power. Next time...decant for a few hours.

  • 1982 Gaja Barbaresco Sorì Tildìn 94 Points

    Italy, Piedmont, Langhe, Barbaresco

    Popped and poured. This was engaging from the first pour, with charming red fruit, licorice, dried roses. Kept getting increasingly interesting and powerful with more time in glass.
