NOMA

Last Friday Uncorked DK went to NOMA for BYO tasting. 12 courses, 10 wines and 8 participants - great setup!
For those of you that do not know NOMA it should be mentioned that it is ranked as the worlds 15th best restaurant. The theme is innovative Nordic cuisine using only Nordic raw materials and with innovative servings where every little thing on the palate contributes to the overall balance of the dish - kind of like what we search for in wine.
Now on with the wines...
We had a bottle of Magnum Krug 1990 with the appetizers and the two first dishes.
This flight introduced me for the first time to Montrachet. As it turned out it was not the only one this evening. It matched just amazingly with one of Noma's signature dishes with raw meat, tarragon and crushed juniper.
This bottle were brought by Michael, who by bringing this showed absolutely extraordinary generosity! And proved for me as well that people do in fact drink 2000$ wines! It was mashed with a dish of... fried eggs... with mushrooms and truffles - PERFECT!
This were just two fabulous Barolos.
This was an amazing bottle of wine... as if we were hypotized we just kept repeating "this is the sickest nose" over and over again... however it proved to me that the best wine of the night (in terms of quality) is not necessarily the personal favorite.
This great bottle was another fabolous match with the dish which consisted of a dessert of dried flowers in different forms - sorbet, meringue etc.
Orange?
After 12 dishes and 10 wines we went for some coffee and beer in the bar. At 1 am we felt like more wine and had spotted the 03 Da Capo on the wine list. Unfortunately the otherwise friendly staff desperately wanted to go home and kicked us out... Besides for this little "unfortunate" incident everything played perfectly!
We didn't find another place where they could serve us the Da Capo, but we found plenty of places where they could serve us more beer...
1990 Krug Champagne Vintage Brut 95 Points
France, Champagne
(from magnum, I brought this) Darkened yellow, a bit lazy bubbles. Nose of rye bread, sherry and overripe apples... looks and smells mature. In the mouth it is very fresh with a good dose of acid, but also develops fatness with air. Tastes young. A great bottle of champagne.
