Uncorked DK BYO to NOMA: La Tâche 96 and fried eggs

Introduction

Last Friday Uncorked DK went to NOMA for BYO tasting. 12 courses, 10 wines and 8 participants - great setup!

For those of you that do not know NOMA it should be mentioned that it is ranked as the worlds 15th best restaurant. The theme is innovative Nordic cuisine using only Nordic raw materials and with innovative servings where every little thing on the palate contributes to the overall balance of the dish - kind of like what we search for in wine.

Now on with the wines...

Flight 1 - Champagne (1 Note)

We had a bottle of Magnum Krug 1990 with the appetizers and the two first dishes.

  • 1990 Krug Champagne Vintage Brut 95 Points

    France, Champagne

    (from magnum, I brought this) Darkened yellow, a bit lazy bubbles. Nose of rye bread, sherry and overripe apples... looks and smells mature. In the mouth it is very fresh with a good dose of acid, but also develops fatness with air. Tastes young. A great bottle of champagne.

Flight 2 - Montrachet 1 (1 Note)

This flight introduced me for the first time to Montrachet. As it turned out it was not the only one this evening. It matched just amazingly with one of Noma's signature dishes with raw meat, tarragon and crushed juniper.

  • 1999 Marquis de Laguiche (Joseph Drouhin) Montrachet 96 Points

    France, Burgundy, Côte de Beaune, Montrachet Grand Cru

    Dark/golden yellow. Amazing and very special nose with loads of licorice, some juniper and clove (does this sound like a white to you?) In the mouth this has immense fatness, but also that certain ethereal lightness that only the greatest of the greatest can achieve. Good acid and some delicious smoked yellow fruit. Licorice again. Did I mention licorice? Absolutely stunning.

Flight 3 - Chevalier-Montrachet (1 Note)

  • 2000 Etienne Sauzet Chevalier-Montrachet 94 Points

    France, Burgundy, Côte de Beaune, Chevalier-Montrachet Grand Cru

    Light yellow. A bit of licorice, red berries and some spicy oak on the nose. In the mouth this reveals a delicious fatness, but it is also a bit excessive on the oak, a bit too much sticky caramel for me... with some time in the glass however this integrates beautifully and gains balance and complexity - christmas pudding? Very nice white burg indeed!

Flight 4 - Montrachet 2 (1 Note)

  • 2001 Domaine / Maison Vincent Girardin Le Montrachet 95 Points

    France, Burgundy, Côte de Beaune, Montrachet Grand Cru

    Darkened/golden yellow. Very intense nose, almost burns away the little hairs in the nose. Bright yellow fruit and burned cookie crumble. Almost as rustique as a glass of Armagnac. Very classic mouthfeel with yellow fruit, hints of licorice and a good minerality. Very long aftertaste.

Flight 5 - La Tâche (1 Note)

This bottle were brought by Michael, who by bringing this showed absolutely extraordinary generosity! And proved for me as well that people do in fact drink 2000$ wines! It was mashed with a dish of... fried eggs... with mushrooms and truffles - PERFECT!

  • 1996 Domaine de la Romanée-Conti La Tâche 95 Points

    France, Burgundy, Côte de Nuits, La Tâche Grand Cru

    Nice dark intense red. Very delicious and perfumed nose of amaretto (Italian dessert cherries) and wild strawberries. In addition some massive spicyness lurks behind the sweet fruit. In the mouth this in pretty intense with a good light mouthfeel and some fabulous secondary herbal notes. Very long, ends just a bit dry. All in all a great glass, only little drawback is a slightly diluted mid-palate.

Flight 6 - 1999 Barolos (2 Notes)

This were just two fabulous Barolos.

  • 1999 Giacomo Conterno Barolo Cascina Francia 95 Points

    Italy, Piedmont, Langhe, Barolo

    Dark red. Amazingly sweet and fruity nose with cherries, marzipan, nail polish remover, menthol and flowers. An amazingly hedonistic Barolo, this just has so much of everything. Nice balance, good intensity and long.

  • 1999 Giacomo Conterno Barolo Riserva Monfortino 97 Points

    Italy, Piedmont, Langhe, Barolo

    Very dark red. Mature red-brown berries, brown sugar, nail polish remover, toasted oak-like aromas. A bit closed, but cannot hide its greatness. In the mouth this just blows you away with its immense structure, fine tannins and mature fruit as well as minerality. It needs time, but with effort - swirling, gurgling etc... some of its stunning features can be forced out into the open. Best Barolo I've ever had.

Flight 7 - 2003 Chave Hermitage (1 Note)

This was an amazing bottle of wine... as if we were hypotized we just kept repeating "this is the sickest nose" over and over again... however it proved to me that the best wine of the night (in terms of quality) is not necessarily the personal favorite.

  • 2003 Domaine Jean-Louis Chave Hermitage 98 Points

    France, Rhône, Northern Rhône, Hermitage

    Very dark, almost black. This is one the absolutely most intense and stunning noses that I've ever experienced - coffee, pine needles, menthol, herbals galore! In the mouth this is classic North Rhone, huge, but also light with a great mouthfeel, very intense and so loooong. This is a product of very mature fruit, but all is kept nicely in place and balance. Though not my personal favorite of the evening you have to stand in awe of a wine like this.

Flight 8 - German Riesling 1 (1 Note)

This great bottle was another fabolous match with the dish which consisted of a dessert of dried flowers in different forms - sorbet, meringue etc.

  • 2006 Vollenweider Wolfer Goldgrube Riesling Auslese Goldkapsel 95 Points

    Germany, Mosel Saar Ruwer

    Light yellow. Very intense nose of mature apples, flowers, honey and minerals. Very fat, intense, yet fresh and delienated. While this is released as an Auslese it holds a level of sugar that would earn it the right to be classified as TBA without problem. Another great 06 Riesling from Germany!

Flight 9 - German Riesling 2 (1 Note)

Closing

After 12 dishes and 10 wines we went for some coffee and beer in the bar. At 1 am we felt like more wine and had spotted the 03 Da Capo on the wine list. Unfortunately the otherwise friendly staff desperately wanted to go home and kicked us out... Besides for this little "unfortunate" incident everything played perfectly!

We didn't find another place where they could serve us the Da Capo, but we found plenty of places where they could serve us more beer...
