I was drinking some wine the other night and reflected that sometimes my palate is more receptive to wine than at other times.  There seems to be times when even the nastiest wine seems to hit the spot and other times when even the finest wines known to humanity seem flat and dull.

I know some wine tasters try and taste only at certain times of the month - some people insist it is something to do with biorythms or some-such new-age thing changing the way the palate works.

Thoughts?

I don't anything about biorythms but I often have the same questions. It is puzzling when a wine that you have enjoyed before just doesn't taste the same. what can effect it?
Food, emotions, company you are with, biorythms, temperature of the wine...........?

I think your palate is definitly affected by what you ate that day, no matter how many hours have passed. It's all gastronomics these days!!

I read that the tasters at WS like to taste in the morning because that's when their "palates are the freshest".

BTW, as I am writing this, I am struggling with the proper use of "effect" or "affect".

J, since you brought it up, the proper word used in the sentence would have been "affect"

I agree that the palate changes, and I would say that it is most affected by the effects of food.

but still, wouldn't the difference you may have in 2 different bottles of the same wine be bigger than the changes in your palate?

I was thinking that, and that cannot be discounted, but I do think that the palate is sharper and more focused on some days and somewhat fatiqued on others.

As as mentioned above, the environment in which you drink the wine, the food matched with the wine - all these variables combine to make a wine taste better/worse than it actually is.

This conversation, along with the thread on tasting at wineries, helps me remember why I'm becoming so intrigued by wine. The fact that no two bottles are every exactly the same; the fleeting nature of it all - what an amazing product!

I guess if we wanted more consistency we would all be on beertracker.com...
