I lived in San Francisco for over a year and didn't really find that many butchers.  I thought it was strange given SF being a more foody city.  I guess everyone eats mung beans there!!!

I have been in SF for 4 years and have found the same thing.  I tend to go to Costco for my meats. (although the "beefcake" down in the Castro, is unavoidable )

I think all the grass-eating hippies must have forced the butchers out.

not sure what the proper caption should be for this "Bloody Board"
maybe... "meat lovers eat your heart out"?

as for the proper words to describe
some of the reactions i have encountered here
when they come face to face with the ugly truth
fingers might be right...
but why reinvent the wheel...
when wine therapy has already done a superb job
outlining the phenomenon in their policy statement on BS ...

"On bullsh!t:  overstatement, hyperbole, misrepresentation, misdirection, bad logic, poor argumentation, dogmatism, unacknowledged ignorance, and self-aggrandizement are all part of the culture of wine discussion and much other discourse besides and cannot be denied.  Patients are encouraged, however, to minimize their reliance on and indulgence of these habits and techniques, for their own benefit and for the benefit of the group."

I always found it strange in SF that while they have superb restaurants on every block it is very hard to buy good food to cook yourself.  In the end I found it easier to eat out the whole time.

In Europe it is considerably different in that even small villages will have butchers, little vegetable markets etc, especially on the continent.  In the UK this has been dying out for a while, but my local butcher in London says that trade is really picking up again for a lot of butchers, and most business is coming from younger people.  They are more concerned about the quality and providence of their meat and are willing to pay a bit more for it rather than the junk you get in supermarkets.

My father in law is a butcher in France and you can see the HUGE difference in quality with the crappy meat that is hacked to peices in supermarkets and the good stuff you can get in a lot of butchers shops.  Not only is it to do with the cut of the meat, but also where the meat comes from.  A lot of the supermarkets trade with huge farms where the cows, or chickens or whatever are basically fed a diet of drugs and junk and are looked after very badly and the quality of the meat is poor.

He always bought local produce that has not had to be transported thousands of miles and was well raised without pumping them full of hormones.

I have to say, in the UK the reputation of a lot of the huge cattle farms/ranches in the US is not good.

news must have blown over
ever since Oprah blew the barn doors
off the US cattle industry
though i don't think they changed
their way of doing business a bit
though i have see a rise in consciousness
Whole Food Markets chain
has been growing by leap and bounds ever since O's expose...
a new store opens here in chicago every 2-3 years
large majority of their sources are locally and organically grown

on a similar note
wasn't madcow... UK born?
i can see how this would serve as a walk up call
a shame that it takes a tragedy of such proportions
to open the eyes of one generation
notably a younger one
