By far the best bottle of wine we'vehad in the last year or two. Impeccable condition, both label and cork. Decanted three hours. Wine built up to an enormous peak of power, and finesse and volume. Fruit, tannins, pencil shavings, minerals. At absolute peak, but feels like it could stay here for another decade.

Superb nose of intense rose petals, black olives, and olive wood. Olive (almost hermitage-like) nose came to dominate after several hours. At its best in the first few hours; became somewhat loose after 3-4 hours.

Out of this world. Extremely full, concentrated without being heavy or overextracted. Reticent at first, developing over 2 hours in the glass into a really glorious, mineral wine. Drinking superbly now but still youthful -- will probably improve over another 5 years and drink for another 10.

From double Magnum. One of the greatest with burgundies ever. Full of life, structure, balance, and the beginnings of complexity. Is delicious, but also has a decade or two ahead of it. Just a tiny hint of attractive reduction on the nose.

One of the most interesting, unique wines I've ever had. (Bought off of a restaurant wine list at an attractive price and taken home.). Perfect cork, bottle in impeccable state. Amazing aromatic complexity and "fleshiness" -- great length too. As always with Mondeuse, you wish there was a bit more acidity, but serving slightly cool helps.

Drinking very well but with further aging potential based on the fact that it developed significantly over 1-2 hours in glass. Already a lovely wine, it built in length, complexity, and volume, opening up to a rich, sweet, voluminous (but not powerful), elegant wine, with notes of pan d'epices and red fruit. Superb.

Built and improved over 1-2 hours in decanter before declining -- must be at peak now. Fabulous nose of black olive, bacon/bacon fat, garrigue spice, some lovely high notes of sweet spice underpinned by the low notes. At first mouth was slightly flat but as it opened up it took on length and complexity. Scoring the nose alone I'd probably go up to 97.

Decanted 1 hour, drank over another hour. Gorgeous, deep nose -- smoky, lapsang souchong, some fruit, still quite youthful. Good length, balanced wine. Mouth excellent but less exciting/exotic than nose. Can certainly age and perhaps improve 10+ years.

Superb wine. Still very young; will require 10+ years to really show. Extremely rare as this was purchased privately at the auction of the Hospices de Beaune, with the elevage done by Jean-Nicholas Meo. Have never seen another bottle.

My first experience with old Rayas (thanks, Eric!). What a treat. Astonishingly pale in colour. The nose (and mouth) have layers of complexity, and the wine just keeps going. While definitely not burgundian in weight, it's certainly burgundian in aromatic complexity -- quite masculine even though ethereal. The alcohol does seem elevated, giving a slightly candied / stewed character, but that seems to be the direction of all CNdP over the last 20 years and is a matter of personal preference.

This was a very surprising 1991 -- a terrible, wet vintage by reputation, but a truly outstanding Palmer. The wine (a pristine bottle) went through several stages of evolution over 45 minutes in the glass -- definitely do not decant this as you'll want to experience all of them. At the very start a strong (pleasant) bell pepper and graphite aroma, quickly darkening to secondary/tertiary aromas. Very full, round, rich, and long in the mouth. Absolutey delicous and complex. Towards the end it was starting to lose focus; this is one to drink up. An outstanding, fully mature bordeaux.

Finally open for business though with plenty of aging potential in front - very nice now, can hold at least 5-10 years. Good fruit, tannins fully integrated, iron comes through. Decent length. Balanced. Commenting on prior notes, no detectable oak (chevillon uses little new oak, around me 30%); and I couldn't think of anything farther from california. There is phenolic ripeness. But this is the opposite of a 'phenolic wine' - with wonderful balance, acidity, minerality, integrated tannins ...

In a beautiful place right now. Rich, mid-dark fruits, volume, length. A hint of ripe, integrated tannins give a bit of structure and suggest 3-5 years more aging potential -- not more as this is a fleshy wine that lacks a bit of acidity for the ripeness, and it becomes slightly flabby when warming up from cellar temperature / after 1-2 hours. Not hot, though, and thoroughly burgundian even if fruit-forward. This bottle showed better than the last several, probably because it was served directly from the cellar (14-15 C) and benefited from the temperature.

Wow! Simply superb, and surprisingly accessible now. The nose leaps out of the glass and grabs you. Very complex and layered aroma & palate -- palate-staining, long, full without being big. A bit of pineapple and caramel (there's oak but very well integrated already). So much potential.

Fully mature and showing beautifully. Very pale pink with gorgeous and rich aromas of pan d'epices. Held up well in the glass over 1-2 hours but didn't develop further. Elegant, not powerful. Drink up!

Superb, but fairly closed at this point. Began opening up at the very end after 2 hours. Sweet fruit. I'd wait a long time before revisiting this.

Extremely concentrated, dense, almost thick wine with extraordinary length. In a ripe style, almost slightly raisiny, but with good (ripe) tannins and acidity to balance. Almost too intense to drink now unless you like super-rich, intense wines -- but likely to be very interesting in 10-20 years, probably a very long-lived wine.
