This is as close to a perfect Cabernet Sauvignon as I have ever had. Remarkable how good this is drinking this young. Beautiful fruit-driven nose. Oak is subtle in its compliment. Softness across the tongue. Structure, length and finish, all in perfect harmony. Bravo!

Three hour decant. Huge black fruit nose. Currants, and some sandalwood notes. Creosote. Richness on the palate. Tannin structure to last 25 years. Impeccable balance as there is no noticeable alcohol, no matter how long you hold it in your mouth. Long finish. A lot of Cabs cost $75+, rarely is one really worth it. This is.

This rating is based on the two glasses left in the bottle on night two.
Decanted for 90 minutes. dense, unyielding and somewhat muddled finish with the tannins still fighting for supremacy. I found myself confused, since the night before, I over-decanted an '07 Cayuse.
Vin-Vaced and cellared. On night two this wine was downright gorgeous. Shameful how little I had left at this stage. Blues and blacks in full bloom, silky engorged mid-palate, and a 60 second plus finish.

Justin is such a master at balance and restraint. Most wines that come out of Paso are so overblown and spiked with ABV. This effort is so juicy and full of red fruit. With a grilled Ribeye, it took on another dimension. Such a perfect combination of fat, fruit and tannin.

This is drinking tremendously as always. Such depth, balance, and breadth of flavor. Super-rich without being overextracted or fake-fruit. Gorgeous blackberries, marionberry, and toasted sweet tobacco leaf on the nose. Black cherry lurks in the recesses of the nose. Palate is all blacks. A chewy everlasting finish that just cries out for more cellar aging. I am by no means wealthy, but being on this list since vintage 1, and treating myself to a six-pack every year, makes me feel like a million bucks.

The finest Cabernet Sauvignon I have ever had. The lushness of the nose and mouth was only surpassed by the incredible balance, length, and the softest tannins I have ever tasted.

Just a remarkable wine. One of depth, age and beauty. balanced beyond description; unquestionably Togni from the first sip. This is one of the truly signature palates I have come across in my wine experiences. I have heard they can go 30+ years and I believe it.

Biggest most massive wine I have ever drank. Loaded with minerality, bloody meat and the blackest of fruits. Again, Cayuse has baffled me witha wine I am at a loss to describe. How 'bout this, "AWESOME".

2 hour decant. Another remarkable experience with The Frog. Touch of menthol over the top of the usually bloody, iron and gamy nose. Satiny over the tongue, with much more feminine qualities that when last tasted.

Incredibly youthful at this point. Open for business, but yet to develop the secondary notes. Still vibrant purple. Complex nose, generous mid-palate that is awash in fruit, smoke, cedar and creosote. The finish is the tell-tale sign that this is not at its peak. Finish is a bit aggressive. Not what you would expect from the nose, tongue or mid. This could go on for 30-40 more years, and still improve.

A silky Syrah of great length that blossomed after a nice long decant. Aggressive right after the cork pull; notes of iron and game, the usual stuff you get from The Rocks. Night 2, wow. Fruit emerges. Femininity takes the dance floor. Just delightful.

Immense wine that should not have been opened for another 10 years. Initial nose of menthol, smoky oak and blueberry. Lots of wood on the palate in addition to the dark blackberry fruit. It's quite a battle between the oak and the fruit at this early stage of this wines life; all remarkably balanced, though viscous and dense. Lacks nuance and showed zero evolution over the six hours it was open. Decanted for 4, drank over two+.

Two hour decant. Remarkable. Big classic Washington Cab nose with high sweet notes that separates this from the rest. Dark plum, and cassis for days. Some sweet tobacco and leather also on the nose. The first sip was a bit aggressive and I was taken aback, but from sip two until the bottle was empty it was just heavenly. It's good to note what you taste, hell they're called tasting notes for a reason; but every once and a while a wine will change the way I feel, and right now I feel great. So glad I'm on the list.

Stunning Napa Cab that is stuffed with black and some blue fruit. Tons of defined structure. Huge. It drank like a 2012. I could see this going 25 more years easily. One regret was that we brought this to a restaurant and therefore it did not have the proper decant. I would give it three or four hours minimum.

Transparent crimson. Floral bouquet of strawberry and pomegranate. Mild spice, cola and sweet white chocolate on the nose. Delicate, yet lively on the tongue. Strawberry and pomegranate on the palate. A soft transition into the stony midpalate to a bright acidic finish. This wine is beautiful. Supposed to be an off vintage. I look forward to many more from St. Innocent.

Flat out delicious. Decanted 4 hours. Needs about 10 more years in the cellar, to reach its prime drinking window, but the hedonistic version I drank last night was exquisite.

Please give this a few more years. It was tremendous but that is based on the last glass, after a 90 minute decant and another hour open in bottle. Only at this point was this wine beginning to show its potential.

This is a remarkable effort. Lean mountain fruit; blacks and blues, high-toned. Just the right balance of toasty oak. Lingering. I paid $50 and I'm not complaining, but know this could have been had for the mid-thirties. What a steal.

I drink a lot of Syrah, from all over the world. It's diverse styles are what draws me to it. I tend to like the big dense Syrah of Washington and Australia. That said, this wine is one of the most elegant Syrah's I have ever had. Dark red nose, very floral, almost no spice. Balance is impeccable. Considerable weight on the palate, but a mid-palate that is awash in ripe reds and blacks, that dance across your tongue. Nice clean finish, that is no easy task considering the volume of stuffing in this one.

Far and away the best WS wine I've had. I've also been a big fan of Hirsch's San Andreas pinot. There is a remarkable likeness between the two. Juicy, balanced, with layers of flavor beyond fruit notes. Gorgeous nose.
