2014 Domaine William Fèvre Chablis 1er Cru Les Lys

My third and final bottle, and all 3 of been pretty dang terrific. At a decade in, the classicism that is the 2014 Chablis vintage has made a rock solid foundation for this wine to grow and develop. And it has done so impressively. We still have the Granny Smith and some oceanic matter swirling around, but this has increased it mineral presence over the last 4 years since my last go. Oh the nose, it has the Chablis holy trifecta for my nostrils: Iodine / flowers / spearmint, maybe not the most aromatic, but get these three together and I'm happy. Almost bittersweet opening a 14 Chablis these days, as we all wonder if we will ever see anything like this particular vintage again. Sure don't make em' like they used to.

Every time I drink Tempier Rose I wonder if I can ask for much more from a wine. Sure, it will never be as complex and long lasting as great Burgundy, Bordeaux or Rhône but it’s easily as pleasurable, if not more. Which brings me to the pricing of this wine. If you look at Rose as something to be quaffed during the summer months, nothing to think about or pair to, then, undoubtedly, the price tag will irk you. However, if you buy Rose as a wine that can be stored/aged and consumed all year then the price is fair, more than fair. How much better is Tempier Rose than mid-tier Macon or California Chardonnay? Tempier Rose is more versatile at the table, more aromatically complex and satisfying to drink.

With very few exceptions (Pibarnon comes to mind), in my mind most Rose' wines should be consumed within a year of release. While they certainly evolve, they also tend to lose that liveliness that makes them so attractive as a youngster.

This is still an enjoyable bottle, but it doesn't have the verve it possessed a year or so ago. Note to self - find and consume the rest of my stash soon.

Popped and poured. I was a little worried it might not show well without decanting, but it drank great right from the start. Floral, orange rind and menthol accents. Some spice. Delicious with a garlicky shrimp and couscous dish. The bottle had been standing up for a while in the cellar, and there was quite a bit of sediment at the bottom. No need to rush with my remaining bottles.

My buddy Eric thinks this bottle is 20 to 30 years old. Golden in color, but not super dark. Nutty, caramel notes on the nose. Smells like it has some age on it. In the mouth, at first you get some of the oxidized, nutty caramel notes, but then surprisingly you get a blast of bright citrus fruit. It finishes pretty nicely. We enjoyed this.

Followed Bob H's lead. Perfect for a snowy night in the woods of SW Michigan. Stayed in, started a fire, cooked and enjoyed this fine Barolo. Unfortunately my last 98. Still young and tight. Almost no bricking and deep ruby. After a small glass, I decanted and swirled a lot. Dark cherries, violets, tar, leather, dried thyme, porcini, balsamico. Just a different beast from most of the entry level or moderately priced cru Barolo's. Wonderful.

Had this side by side with a 2019 Domaine Méo-Camuzet Bourgogne Hautes-Côtes de Nuits Clos Saint Philibert Blanc. I like the richness of the 2020 Chablis and this fit the bill. I think the 2020 character added another dimension to an already complex wine. Having this with Himachi crudo it was the better wine with the dish. Rich, big, for a chablis, great balance, long finish. Every sip made me want to go back for more.

Glassware: Grassl Cru
Prep: Decant, 2 hours from first pour to first glass. Finished over a couple nights.

Nectarine, yellow peach, ginger, cardamom, sea breeze, and gravel/chalk minerals waft from the glass. Lithe on the palate, yet dense in flavor, with layers of nectarine, yuzu, peach pit, and sandalwood. Love the brightness of the fruit complemented by the balance of fine chalky texture and refined acids on the palate. Just a touch of vanillin and cardamom on the palate after a long finish. After a couple days in the fridge the aromas and flavors remain present but the wine is more harmonious.

People have asked me why I open Seth's wines (and other Oregon whites) so young. I don't doubt the best years are ahead and that they won't gain complexity with age, but it's hard not to try them in their youth. Through the veneer of the chiseled, acid-driven structure common to many of Seth's wines, I can already see what's in store.

I brought a 2020 last night to a restaurant as a back up to an 09 Dauvissat Forest in case that one was oxidized. It wasn't, thankfully, but I will be opening it soon. Love the energy and brightness of these wines, much like Walter Scott's.

Another bottle of the October 2022 disgorgement. 60% PM / 30% Chard / 10% PN. 4.5 gms dosage. Has a faint tinge of peach color, just enough to notice in the glass. We opened this yesterday (stoppered overnight), I shared the bottle but didn't take any notes or pay enough attention so my note here is from the final glass of the bottle. Quite a bit of fleshy texture in this bottle. Tangy pear, nectarine and a bronzy, oxidized note. This bottle seems less complex but more stuffed with texture. With the temperature relaxing on the wine, it gradually picks up some limey acidity, with some mineral and fleshy strawberry. I find this bottle to be more tangy, more fleshy in texture, yet with plenty of fruit signature that I still think makes it a cool value. Still seeing these for $45 US, and even some 375s for $27 recently.

6/4/2023 5:32:00 AM - Thanks for the note, Frank. I still need to pick up another one of these to try again, but I think it may have been what you called the bronzy, oxidized note I was picking up on. Oddly, bronze was also a word I remember thinking, though I don’t think I wrote that. It came across to me as bruised, bronzed, etc. I am curious if I can pick up on the other fruit you mentioned next time.

Champagne is challenging for me to break down into smaller “bits”. Much more so than other wines. It also changes so much at different temps and when it loses its gas, which makes it more interesting to study, in my opinion. Cheers Frank.

I've been a slacker w/r/t tasting notes on this particular wine, as I see my last/only one was over a year ago. One thing I will say about Pibarnon - the wine will in fact evolve over time, as opposed to just maintaining/surviving. I mention this because what I'm sensing today, and I have noticed this in other vintages, is that the wine has lost some of it's edginess, for lack of a better word.

At this point, probably medium-bodied for a rose, slightly creamy texture on the palate, with citrus notes. I like this a lot, but will admit that I'm missing that vibrant feeling you get from the just-released vintage. Although that is probably just personal preference as opposed to any qualitative comment.

Otherwise, I would have just stuck with the 2022. I usually prefer most roses younger and more vibrant, as Bob said. I may bring a 2021 Tempier or Nuances on Sunday. Just to have on hand, depending on what ends up on the menu.

I like this more than the Ultradition we had a few weeks ago. This is more citrus and mineral where that one showed more appley. Oddly, I believe that one was extra brut, and it showed richer and rounder, and this is brut and it seems more lean and austere. I like this one though, and I will buy it again.

From memory and my notes, it reminded me of apple pie, with the dough, spices and apple. This one seemed more citrusy and bright. The next day, with the wine more still-like, I picked up on some tangerine. I think you may have noted that in one of your tasting notes. I should try them side by side next time, something I wish I did more of. Thanks for the comments, and I hope we cross paths again soon!
