Maybe just a tad broader with a bit more wax and butter, but overall the citrus and the minerals still dominates both nose and palate. But I don't get the bitter grapefruit anymore, or at least a lot less of it. That is actually an improvement. |

4/22/2023 - Gargantua Likes this wine: NRAn exquisitely dry wine with “du gras” as the French say; given the dry finish, this rich layer is perceived as a palette of paradoxically rich aromas— Butter and hazelnut, graham cracker, then fresh tarragon and salty crushed seashells. “Du gras”, truly. This texture and breadth lends it authority in food pairings. Case in point; I followed a risky intuition to its logical end, and was pleasantly rewarded. I paired this Chardonnay with Cantonese salt and pepper fish that was rife with both garlic and ginger, it still worked well. Violating one of the most primordial of pairing rules: garlic and white Burgundy typically are at brutal odds w each other. Not so, here… thanks to the minerality, there’s just something deeply satisfying, that really reminds you of comfort food with this wine. |
