Really nice juicy blackberry blueberry pork products :) some dusty earthy notes and tannin. Fantastic acidity went extreamly well with baby back ribs. Drank over 4 hours, last glass was the best.

A baby. Even after several hours this wasn't giving up much. Almost black and super dense. Black fruit and bacon fat but the various elements just aren't in focus yet. The tannins are pretty fierce. Put this away for at least 5 years.

My first Cabot (a BerserkerDay purchase), and wow! I have never had a wine with such intense bacon flavors. Smokey, salty, fatty, meaty. But with some nice dark fruits to balance it out. A full meal in a glass! The bacon flavors faded a bit over time, but the wine remained quite pleasurable.

Popped and followed for 4 hours open. Very dark purple, almost opaque with quick, clear legs. Moderate sediment. Profound and pure blackberry, caramelized pork, and Backwoods Smoke cigarillo aromas that seemed to lose a lot of intensity after an hour. The palate is wonderfully juicy with acidity and is joined by some serious mineral texture, making this an absolute foodie wine. It has a light-medium body but delivers oodles of fruit goodness into a long finish. It did seem to jumble a bit from hour 1-2 where I thought the oak monster was making an appearance, but by the third hour in decanter the elements mingled perfectly into a really attractive package. 5+11+17+8= 91

Awesome. Bacon, smoke, and more bacon. Lovely balance and full body with excellent acidity to match at the dinner table. This had everything you could want from a N Rhone and more. Definitely more on the meaty bacony side, but there is great underlying fruit and some herbaceous notes. An absolutely fabulous wine that I feel lucky to drink.

I didn't fully heed my own advice to wait for a few years (I only lasted 16 months), and I am glad for that. While still formidably young, this has started to round beautifully into form. Lovely smoke on the nose moves to a beautiful palate full of red fruit, soy, and mineral. This is truly lovely, world class Syrah. There is lots of acid and lots of structure here, but it balances out quite well. This still needs plenty of time, but it will be one to rival the best Cabot bottlings.

Gave this an hour to breath and that is a disservice on my part it is desperate for more. A bruiser of a wine, this has tremendous structure and nothing to do with ripeness. Lots of dry chalky tannins and minerals pull at the perfectly ripe fruit to lend tension. The strength of the tannin is about an even match for the meaty side. The finish shows the quality of the wine, plenty of florals and perfume which wasn't expected. Basically this is really really good, but a bit of a boxing match at this point if you only want to drink and not eat. Need to hold this for 5 years, unless you are making some braised/roasted food and then you are good to go.

Notes after slow-0ing for 12 hours.
Youthful appearance; very opaque and inky dark ruby color with heavy legs leaving their purple tint on the glass. Heavy sediment in the bottle.
A profound bouquet at the pop lessens significantly after an hour or so, both on the nose and the palate. What's left is restrained amounts of ripe raspberry and strawberry, smoky bacon and garrigue, dark tobacco, and white pepper.
Structure has gained the smoothness of maturity but I'm afraid it's starting to leave the must in the dust and could be heading into old age with an empty fruit basket. As with all Cabots I've tried, the acidity feels so naturally refreshing and balanced with minerals, the tannins are measured and integrated, but I think this one is a drink soon (1-2yrs) due to the fading presence in flavors. 4+11+16+6 = 87

Sigh, I was sad to drink the last one of these. I should have purchased more. Less leafy than the prior bottle, this was clean, fresh, deep and pure Cabernet. Some leaf and stem dances on the front of the palate, but this wine is dominated by black cherry, cassis and a hint of cranberry. Perhaps it is a bit linear, but the utter purity and freshness more than make up for it. Nice job John!

This bottle was pop n poured and that was a mistake. We didn't have time to decant properly. There was some VA and detracting heat on the finish that I suspect would've disappeared had we decanted it appropriately. The fruit and flavor profile were tight as well. Suggest 2+ hours of air.

P&p. Attractive, pungent, smoky-savory (barbecue?), deep-dark-earthy, dark fruit aroma, with healthy dashes of black pepper, oil-cured olive and dried herbs/brush. Similar flavors; fresh and cool as well as savory and deep; on the soft and smooth side for a Cabot, but it does have some tannic structure, and good acidity. Surprisingly, the fruit has a distinct peach/nectarine element (even though there's no Viognier in this as far as I know). Nice stony and saline mineral streaks. Tasty/moreish, characterful wine. Ready to drink, but no rush.

Splash decant ... Tart cranberry and cherry. Bracingly dry with tannins a touch too poky. A little game on the backend, but not the layers I've had from other Cabot Syrah's. A tad simple, but still good overall.

Berserkerday purchae. Decanted for 90 minutes then followed for 2-1/2 hours. Perhaps my best Cabot ever. Dark brooding fruit with soy, pepper and balsamic notes. I don't normally sense soy or balsamic when others do, but with this wine, it was all there. The pepper was light, but still evident. The fruit was dark - no sweetness either actual or apparent - and had components of dark blackberries, blueberries and plums. Smooth mouth feel without being creamy. Finish falls of from a strong opening, but it lasts as an undertone in your mouth for a long time. A good value at $30. At three hours out, going to bed, it's still got a nice wallop but the nose is now expressing violets to go with everything else. Bravo John - great effort.

Completely closed. The 2011 marier is way more fun to drink than this bottle at this time, but this is still good juice. It needs time. Like at least a year or two. Bramble and herbs. Darkish purple. Tannins and oak. Good potential, but don't bother for now. After a few hours with air the mid palate came out a bit and the bouquet opened. It has the parts, but it needs sideways time.

Oh Man, I can't wait to pour this beautiful wine for my BurgWhore friends. I bet many of them will be fooled into thinking this came from across the pond. Lots of forest floor on nose. Neither red or dark fruit ... a real nice blend ... light plum or dark cherry? Between the wet earth/fruit , medium mouthfeel and long length, this is a really balanced wine all around.

We had the 04 Kimberleys and the 04 Reed's along side each other with lamb chops for easter dinner. The Kimberleys was very masculine with bloody meats whereas the Reeds was chock full o blueberries and a finish for days. Both wines went well and were great examples of how syrah can contrast given the terroir. Posting this same note for the Reed's.

i didnt blend the two, but I liked the meats of Kimberley with the finish of Reeds.

I clearly recall the first time I had this wine some 2.5 years ago. It was pretty but so reticent. Six months later it was getting a lot more friendly but still pretty reserved.

Wow what a difference two years makes! This is simply exploding with pleasure now. The reticent young wine of the past is gone. Sultry, smoky, silky and explosive. This screams of blackberry and smoke, salt and blood, mineral and chalk. Still quite tannic on the finish but already yielding enormous pleasure and now showing much more of its potential.

Yet another utterly world class wine from Cabot.

Day 1: Gorgeous pinot. Bright and clean and twangy with tons of pomegranate. Me likey. More notes tomorrow.
Day 2: Mmm, this hasn't really budged much in a day. It screams of that nearly indescribable thing that I call "Pinot twang" with piney, funky, twangy aromatics. The palate is clean, mouthwatering, a bit more open on day 1 and moving up the ripeness spectrum towards cherry and strawberry. Really lovely.

Well...I'm getting more Cabot. This was my first Cabot, one that was purchased through a Berserker Day Deal. This is a $26 bottle that drinks like a $50 bottle. Decanted for an hour (this should be a minimum right now) and the first sip showed some dark berries, smoke, a good amount of spice, and nice balance. After being open for a couple of hours, the mouth drying tannins started to take over and overshadow the good characteristics mentioned. There are eight ounces left for today. RaNae liked it as well.

Day 2: This is fricking beautiful. Pepper (white?), dark berries, incredible balance. The mouth drying tannins from last night are gone at this point. Today the wine is a 93. This is a different wine than Peay's La Bruma, but just as enjoyable.

Sadly, this particular bottle had none of the bacon notes and was a bit muted compared to previous bottles. It was a fresh delivery direct from the winery, and may have been suffering from travel shock? Whatever the reason, it was not nearly as good as I was expecting. Just a simple, balanced Syrah. I look forward to the next one.

With 30 minutes of air, palate had a meaty base with bacon and some dark cherry hiding in the background. Mouthful is full and bold. I am thinking of holding my last bottle for a few years. Same on night two after VinVac.
