Lunch with 2012 and 2013 Fourrier CSJ and Griotte, 95 Raveneau Blanchot, 05 Leflaive Chevalier and more (Black Salt, Washington DC): This wine was incredibly fresh and youthful for a 20 year old champagne. The color was only slightly darker than that of the 2007 Cristal it was served behind but it offered more depth and complexity. This is a generous wine in all respects offering an abundance of fruit and acid.

1996 & 1999 Vosne Grand Cru Dinner (Holland Park): The 1996 Dom Perignon started its life as a really precocious vintage, promising great things for the future. It sure has taken some time to come around since then, but if this bottle was anything to go by, it may well be hitting prime time right about now. On the night, this had a lovely nose, just starting to smell nicely matured, with honey and toasty caramel notes floating around a core of ripe red apples, dried strawberries and a little thread of minerally aromas. A very rich and punchy bouquet. On the palate, there was still a really muscular inseam of juicy citrus acidity and serious minerality running through otherwise rich, powerful notes of the ripest apples and strawberries. This filled the mouth in very a full, generous fashion, with a fat creamy mousse and lots of power and super-impressive depth, but as always with the 1996, it was still that sinewy structure that struck me at first taste. This time round though, there was also a sense the wine was rounding out and starting to mellow and mature, with some honeyed, slightly oxidative notes just starting to float out from behind the layers of fruit and acid and mineral. If anything, the wine actually felt a little clunkier than usual, a little less precise perhaps on the midpalate. That was my only complain though. It pulled together nicely again at the finish, where a hint of bittersweet lemon zest, spice and mineral then trailed away into the distance. All in all, a great champagne, starting to drink really nicely.

3 bottles of Classified Growth Bordeaux from the 1989 vintage for the first of 6 events for my 70th Birthday, I was the first to arrive so I opened this Rose, nose of yeast, strawberry, cranberry, and raspberry, typical sweet and sour fruit from the Pinot Noir, medium/dark salmon color in the glass with a great mousse and tiny bubbles, two of us rated this the wine of the night, same on the palate, rich and creamy fruit, long, lingering finish, had refrigerated for 3 hours and then allowed to warm up in the glass to show it's best.

A private lunch (Restaurant l'Oustau de Baumanière **, Les Baux-de-Provence, France): According to the young sommelier a disgorgement of the period, the bottle having remained untouched in the restaurant's cellars ever since. Their last bottle. Level 1cm below the foil, very light depot. Perfectly bright, lively golden colour with only a hint of amber; completely fresh nose with candied fruit, hints of dried fruit, explosive aromas of fresh Paris mushrooms, white truffle and dried porcini, spices, vestiges of red fruit, whiff of vanilla caramel, no off notes, lovely depth; retains a very gentle mousse on the palate, still juicy and lively, dry but rounded and completely together, gentle bitters, subtle citrus flavours with candied lemon eventually develop a tangy, salty nuttiness; extremely long and intense finish. Remains perfectly intact over ninety minutes. Once in a lifetime. I lack the experience to really rate this, but I cannot imagine a more perfect bottle of centenarian Champagne.

Note: according to sjwshiraz, who recorded his 27 August 2012 tasting note of this same wine at this same restaurant under the heading "1911 Moët & Chandon Champagne", the bottle was supplied by Moët to the restaurant in the 1970's. No doubt, he got his information from the (then) sommelier there and it seems a very plausible scenario too (in fact even more so).

Dom Pérignon Dinner (Atara): Terrific as always. Reads younger than the '96 Oenothèques enjoyed recently, if less concentrated and developed. Putting out a huge and complex nose tonight, green almond, praline, stonefruit, candies citrus. Rich and hugely flavourful on the palate. Wicked acidity and minerality. A star.

Annual gathering with Chicago winos in Chicago - Burgs, old Bordeauxs and SQNs (Smyth and The Loyalist - Chicago IL): Decadent fully mature nose displaying sweet yellow fruit, candied lemon peel, apple cooked in cinnamon, caramel, limestone and honey. Fully integrated palate, abundant fine mousse, sweet spices and cooked apple driven palate impression, perfect amount of acidity, excellent mineral presence and a sweet deeply toned finish. This particular bottle is fully mature but still retains good freshness and precision. Excellent showing.

It's been several years since the last one, and this seems to be fulfilling its destiny quite nicely. Having entered a very early stage of maturity - but with the obvious stuffing to go many decades more - this offers brilliant purity, precision and a graceful tension that transitions into fantastic length. The kind of wine that is deeply satisfying and at the same time forces one to consider the absolute nobility of the region and in particular, this house. Buy all you can. highly recommended

My last bottle of a 6 pack and served side by side 96 Oenoteque which was an interesting pair to drink side by side over the course of 2 hours. Very similar, clearly same juice. Same quality level and actually no real preference for me. The P1 more giving, voluptuous while the Oeno drier (lower dosage) and chalky qualities. Long life ahead for both.

Opened for my wife's birthday and it was exceptional. I was a little concerned about some of tasting notes as I have another 3 of these to go but I need not have worried! Complex and evolving in the glass over 30 mins with a fine bead and a long finish. I have a proper cellar for my collection and I do wonder if some of the more disappointing bottles out there have not been kept correctly. Even a few months in a kitchen with the constant change of temperature and exposure to light will see off many a bottle (and apologies to those who I am teaching to suck eggs!). I will happily enjoy my remaining bottles over the next few years.

Youthful and boisterous at present this is still approachable for an '08. The Chardonnay dominates today, rich and fleshy, lemon oil, some chalky notes and whilst the attack is a little aggressive there's a lightness to the intense mid palate. Long stony finish. Needs time but this is a cracker. 92+

My second and last bottle of 1999. Had the other 3 years ago and I scored it 96. This one was a little bit more mature and rustic showing Jonah Gold apples, savory,yellow melon, peach. The palate was bone dry and resonated with elements of banana nut bread, pear rind, guava, nectarines and evening star fruit. The finish was delicate yet suave and powerful with dried golden apple and pear, nectarines and guava saturating all the way down with the tiny bubbles with some yellow fruit tartness like persimmons. The finish on this last a good 45 seconds. Perfectly mature and drinking extremely well at this stage. A near picture perfect example of a mature Dom. Drink now through 2025. Outstanding.

Prestige Cuvees Zurich 2016 (Carlton Restaurant Zurich): Again a stunner, the WOTN, not only for me, (14 out of 16), drank it blind, still in an early stage, citrus, typical oyster and seabreeze notes, some toast, nuts in the finish, for me better than the oenotheque 96, at least now, 97-98

Darker amber-copper; very slight oxy note at first, but opened up with so much complexity and with style and balance; rich with old apricots, hint peanuts, yeast, walnuts, caramel, maple syrup, but still bright, light, and elegant at the same time with good lift and fine persistent bubbles; all this balanced out with a slight old fruit ripeness and ending with a long tangy sappy finish. Loved this. Tied for WOTN for me? Capital Seafood for DD.

An older bottle from the early-to-mid 1980's.

Developed, deep apple juice-yellow color. Very rich, developed and beautifully sweet-toned nose with aromas of caramelized sugar, baked apples, oven-fresh pastries, some lemon marmalade, a little bit of browned butter, light coffee tones, mineral hints of stone dust and a touch of nuttiness. A textbook older Champagne nose! The wine is dry yet not bone-dry on the palate, suggesting somewhat higher dosage than is typical of modern-day Brut. There are complex, developed and relatively intense flavors of dried peach, baked apples, roasted nuts, some autolytic notes of brioche and buttered toast, a little bit of caramel, light lemon marmalade tones, a bitter hint of chalky minerality and a touch of exotic spices. The wine starts to be quite resolved and mellow on the palate with very light and gentle mousse along with the balanced, medium-to-moderately high acidity. The finish is very long, extremely complex and quite toasty with rich flavors of roasted nuts, autolytic tones of toast and vanilla custard pastries, a little bit of pithy grapefruit bitterness, light chalky mineral notes, a hint of cooked cream and a tangy touch of salinity.

Once again, an outstanding example of well-developed Champagne at its peak. Although I've never been a fan of Moët & Chandon's Brut Imperial, I must admit that these older bottling have not only survived really well, but also improved into something outstanding and remarkably delicious. Most likely the wine isn't going to be developing any further from here, but neither will it fall apart anytime soon. Very highly recommended.

Noisy bubbles in the glass before they calmed down. Lovely golden hue, flavours of peach, almonds and apricots. Absolutly delicious champagne. Still has many years left.

Right out of the bottle this wine does not show its age very much, with foamy bubbles and a gold robe. The nose is subtle but fantastic. It evolved from summer to fall, from bright notes of pear, peach and honey to hazelnut, nutmeg, pie crust and baked apple. In mouth it’s lively but it also shows the patine that comes with age. Sharp acidity intermingles with a creamy texture and notes of vanilla custard and lemon zest, all in subtlety. Like a middle-aged person who’s fit and healthy. Incredible for a 27yo wine.
