70s French Wines (Jade Palace Seafood Restaurant, Forum): Tasted blind. Dark ruby and vibrant hues.
Fresh and vibrant, lifted bouquet of floral, blackcurrant, dark cherry, sweet spice & licorice. Elegant and showing nice fruits, amazingly holding so well so fresh.
Nice entry, still robust, young with loads of fruits. Blackcurrant, dark cherry, spice and earthy undertones. Vibrant acidity lead to a long persistent finish. Seamless and harmonious.
What a sensational effort as it tastes like a good 80s or even 90s. Judging that Château Pavie has not made its name in those days.
This is so impressive and voted as WOTN unanimously by the group.

Disappointing. 30-45 min double decant was good, with wine opening in the glass. Very mineral nose and rich mouthfeel, with particuarly broad mid-palate. The smokey notes I love from Pavie took a while to emerge. Not as thick as expected. The wine evolved in the glass - at one point was v hedonistic, then became flat with some heat on the finish. Not sure where this is heading, will drink my case soon and with food. I much preferred the 2001 Pavie a few years ago.

Big, bold and strong wine still showing great structure and smooth tannins. We breathed for 6 hours in the bottle before sipping. Crazy long and elegant finish.

Mike Grammer comes to town (Galletto Ristorante, Modesto Ca.): WAY better than the 00 we had a month or so ago….not sugarfied…..tastes of Bordeaux! Wonderful dusty graphite dryness, silky smooth dark berry fruit, currants, old leather, menthol, cigar box, cold smoked oak, licorice….nice firmness with minerality…really super wine to sip on!

We brought this bottle to La Belle Ve for your 38th anniversary. They decanted it for us. We enjoyed a glass of Chardonnay while we gave the Pavie some time to open up. The first taste was of dark cherry with hints of a forest. The last glass was very close to perfect wine.

Decanted for an hour. Dark ruby color. Floral, cherry and ripe fruit. An elegance wine, well balance and good intensity. Great effort for a weak vintage.

Beautiful and lush bouquet with dark forest fruits, coffee, smoke and toast. Same on the palate, ripe cassis, some ripe red berries as well, a touch of sweetness, beautiful acidity and round tannin with a beautiful bite. Already a beautiful wine that shows what it has in store. Good future as well.

Powerful, tannic and full-bodied with intense minerality, this wine is fashioned with fresh, sweet cherries and black and red plums. Compelling with ripe, silky tannins, this vintage demands time before it all comes together. Pavie can be difficult to taste in barrel. In fact, it was difficult to taste through the oak cloak. It took coaxing and effort to find it. I'm looking forward to tasting it again. The wine reached 14.22% with a pH of 3.59 and is aging in 80% new, French oak. 92-95 Pts

big, jammy, chewy, blackberries,
still a baby in the bottle
fresh, perfect acidity
tried a sip or two and decided to decant to let open up
delicious
not sure how other Cellartracker reviewers has issues with this wine.
it is spectacular.
i expect they had storage issues (one said like "see thru" pinot in the glass?? this wine is dark, opaque...no "see thru" so not sure what happened to their wine.)
this is a great wine with many years (decades) of life left
enjoy!

Deep, dark color. Full-bodied. Blueberries, mocha, dark fruits. Doesn't seem fully integrated yet. This isn't surprising since this 2005 is still way young. There's no doubt that this will age gracefully over several decades to come. While I don't expect this to be as complex and elegant as the First Growths, it will be pretty amazing!

160 year anniversary of 1855 classiffication of Grands Crus classees: Quite lively, bright colour for the age, dark with a brickish meniscus. Nose starts off metalic, then comes smoke, smoked sausage, later tobacco, a bit of tar. Medium intensity palate, noticeable but fine tannins. Excellent structure. This was a fragile, but very rewarding wine.

First of the two bottles bought at an auction from UK. Dirty bottle, seemingly stored in a damp, dirty cellar, which is good. Very high shoulder fill, somewhat transparent colour, promising. Cork in reasonably good condition for the age, came out struggling, but in one piece. Colour clear but quite dark, Riojas of that age are usually lighter. Only some fine sediment, not much of it. Nose starts off with black chokeberries, smokey notes, other dark berries. On the palate it is stout, with a note of dry black-currant jam, it has medium+ body for the age of the wine. Initialy quite tannic and dry on the palate. There's a bit of damp wood on the nose, but not in a corky way, later come old cigar box and a bit of licorice appear. Wine is very nuanced and somewhat timid. Long finish which smoothes out like a suede fabric. Well alive, but drying out obviously. I loved how the wine still showed its predominant Merlot character, there was something juicy-friendly about it.

This wine was drank at home without decanting. It was slightly orange in colour and a bit cloudy when poured. The nose had some cherry and medicinal smells to it. In the glass was a wine that had lots of red cherries and some vanilla tastes. It was also quite sour and had strong acidity to it. The tannins were strong but at a good level.
This wine gave no obvious signs that it was corked or spoiled but I certainly didn't enjoy it tonight.

Seductive nose of blue fruits, vanilla, and some sweet candy element. Balanced, but still tannic enough to age well, I'd love to revisit in 10 years. Very nice.

Trelio with the fellas (Clovis Ca.): WOW this is new world stuff here! Never would guess Bordeaux….huge extracted liqueured berry fruit….spicy wood tannins, warm chocolate brownie, plum skin acidity….nice smoothness, but not silky as Bordeaux….very youthful for its age. Tasty, just not what I would look for in a Bordeaux. Also, didn't help that we also had 89,96 Margaux as well!

2005 Bordeaux Retrospective (Morrell Wine, 1 Rockefeller Plaza): The nose was dark, mysterious and alluring with sexy red fruit, spice, hints of cedar wood, balsamic tones, sweet berry, and intense currant. It was smooth and fleshy on the palate, soft even, with ripe red fruits and a gorgeous mouth feel. The long finish was laced with palate-staining red fruit and black plum. The 2005 Pavie has a beautiful drink-me-now personality.

Väldigt fruktdrivet i stilen. Mörk mogen frukt, blåbär, kaffe, choklad, violer och lite tjära. Har trots den här kraftfulla frukten en väldigt fin syra och tanniner som nästan kan balansera upp det. Är väl maffigt i detta läge men kan mycket väl bli helt magiskt med riktigt mycket tid.
Har druckit en del unga Pavie på sista tiden och tycker nog att oavsett årgång så är de lite för mycket. Men det är möjligt att det med tiden visar sig att de är helt rätt på det, men vi får väl se.
