Enjoyed from magnum last night! Bottle popped with vigor and bubbles were perfect. Darkish straw color. We drank alongside a 2004 Dom and the color difference was clear and evident. Right away the characteristic old, pre LVMH gunsmoke flavor on the palate with a lingering finish leaving a distinct impression. Over the course of an hour evolved into burned caramel which then mellowed out to caramel.... Absolutely stunning wine. The table agreed it was likely drinking at it's absolute peak, with perhaps another 5-7 years left for aging. But why wait. Prepare a wonderful meal and enjoy this champagne, preferably from magnum.

This bottle had been sitting a while, how long I have no idea but clearly the extra age has paid off. Bright nose showing salinity and stone. Palate was more delicate and refined then other imperial. Stone, crusty bread, some citrus and salinity with secondary notes of flower. Nice showing great qpr.

Light oxidative notes. Faint wood and nut aromas on the nose with an almost visceral creaminess. Wet rocks, light apricot, oyster shell, clementine peel, and orange creme brulee. Somewhat lighter in overall impression than some of the vintage surrounding it.

Burgundy dinner (The Grill Room at Capella Hotel Georgetown): Relatively lighter and very mineral driven Dom rose. Medium nose displaying a hint of cool red/yellow fruits, strawberry and raspberry essence, copper, a hint of caramel and white pepper. Medium concentration, shy red fruit driven palate impression, medium acidity and fine mousse. It is drinking well.

Consumed from magnum at Cut in Las Vegas. Color was borderline Amber with the slightest hue of rose. Nose was still suprisingly crisp and fresh, with toast, flora and rose and crisp stone. Effervescence was still strong indicating yourhfulness. The palate was mouthwatering, with nutty biscuit, berry, light oak and some yeasty toffee - definitely showing secondary notes as expected. I did not notice much strawberry as indicated in other notes. I can see this wine having time left, but no need to wait. The best champagne I can recall ever drinking.

Color: Straw Yellow, nice amount of fine bubbles. Aroma: Citrus, grapefruit, lemon peel, honey, mint, banana. WIth air, very floral. Taste: @Palate Entry, Brioche, sweet, buttery and creamy. Mid-Palate: Minty, honey, citrus peel, salted toffee. Finish: Lemon, lime, ginger, stoney, mineraly, very price. A very complex Champagne, clean and precise, sweet honey and salted toffee with air. Still has a lot of life left.

Dinner with Fellow Counsel (Sreeni's Place): Very good. Still way too early to drink, but this is one of the sleeker young Dom Perignons I have had in some time. The nose had pretty notes of cream and appley white fruit, lily flowers and a touch of nectar. Surprisingly expressive I thought. The palate was quite a bit tighter though, with neat notes of white fruit, mineral and some floral hints tightly held by fine acidity and the finest mousse. This was really different from how the very friendly, forward 2002 and 2003 DPs were upon release – it was still not showing too much on the night. I liked the overall feel of the wine though; very defined and precise, with lovely proportions and a great sense of balance that bodes very well for its future. Very nice indeed, but it deserves another 6-8 years in the cellar at the very least. 92+

Dinner with Fellow Counsel (Sreeni's Place): Ever so slightly better than the last bottle I had in March, this was very good and enjoyable without quite showing any promise that it will ever be a truly great Champagne. The nose was extra creamy, especially coming after the more subtle, floral 2004, with buttery brioche shades wafting over notes of white fruit, citrus peel and earthy, mineral accents. As in keeping with my notes on the last bottle, the palate had an unusually rich ripeness for a Dom Perignon, showing a depth of creamy white fruit and lemon zest notes wrapped in a consistent robe of fine mousse and decent, if not exactly zippy acidity. While I had felt that this was a bit coarser than normal on the last bottle, it seemed just fine this time round. The greater weight and forward yumminess of the wine did make it feel a little less than sleek, but this was still a classy Champagne. Good finish too, long, powerful and very satisfying. Good stuff, drinking pretty well early on in its life. It will be interesting to see where this goes from here.

Toasty and quite mature. Apple, nut, golden flavors. medium finish. Fine bubbles, still has balance in its acidity.Really enjoying 1990 these days!

From a bottle that has been standing at room temperature in my in-laws house for the better part of 7 years.

Still plenty of bubbles, crisp apple followed by yeast and mushroom finish that lasts.

Goes to show that quality champagne can withstand improper storage and still be enjoyable and complex.

International Blind Tasting (South Africa, Gauteng, Bryanston): Eye: light golden color, streaming bubbles but more in straight verticals. Nose: yeasty, floral, fruit is muted. Palate: crisp, acidic, fruit comes through after a few seconds in the mouth, medium body and finish.

Served at Alex's house in Bordeaux on the occasion of BWE France Tour 2015. Evolved and mature in colour, some beading but little persistence. Stewed apples aromas. I was expecting more biscuity and brioche notes, all that said, I was sated by the soft apple aromas, which persisted. An enjoyable glass with a medium finish.

Wow, this bubble is sipping beautifully now. Toasty, creamy and smooth. Sipping better than the 1999 and will last for quite a few more years.

Zachy's Wine Auction - Late Spring 2015; 5/14/2015-5/15/2015 (Le Bernadin Prive): This was straight up spectacular. So light and dainty, just almost melts in your mouth. Lightly floral, but more I get this impression of that foam that top chefs sometimes put on food. Really beautiful wine.
