Complex sour cherry, earthy, lifted orange peel. It has a pact of everything, delicious to drink now, but I feel it develops a little fast than expected, comparing with other Barbaresco I had before, such as PdB. Might be an awkward batch or not well stored, as the other 2 bottles of 2019 Pajore from the same shipment was also tricky (one is obviously oxidized, the other is better but still matures faster than expected).

Vibrant red cherry, roses, some wild yeast funkiness but in good check. Great fine tannin structure, but quite approachable after 2hrs decanting. Will be a beauty in the next 5-8 yrs.

The first few bottles had a lot of VA that put me off and sent me on to their delicious Brachetto!
Now this has settled down.
Colour: bright cherry red, med rim, purple tinge.
Nose: full, fresh, morello cherry with sous bois notes, still a hint of VA.
Taste: light body, rounded, fresh, notable acidity, morello cherry, soft tannins, med finish, dry and a touch tart but still good fruit.
Overall, potentially a good wine of purity.

Much calmer than my other bottle a few years ago, although still a fair amount of Nebbiolo tannin and acidity - and lots of fine brownish deposit at the bottom of the bottle. Decanted for that sediment and then drunk over the next hour, with the middle of the bottle having the best combination between freshness and integration (the tannins were initially a little rustic). Notes of acetone, slightly stewed dark fruit, tomato and forest floor, decent length, better with amitriciana than on its own.

Had it in Zalto Burgundy and i have to say this is a great wine , that i think i will collect more of in the future. Would be interesting to see how the Barolo´s do from this estate.

Medium garnet in color. Full, forward & fragrant nose of ripe fruit aromas of cherries, strawberries & raspberries with overtones of floral notes of roses & earthy/dusty notes, juniper, tobacco, spices, anise, leather, minerals, herbs & a hint of cedar in the background. Medium-full bodied with a very good concentration of well balanced & smooth textured, ripe fruit flavors of cherries, cranberries & mulberries with herbs, spices & minerals. Lingering finish. Drinks quite well at present with decanting & extended airing but should develop further with additional aging.

Colore rosso rubino con sfumature granata. Naso austero, in cui emergono spezie scure e tabacco, seguite da note di frutti rossi, fiori secchi, e nuances di sottobosco. In bocca è intenso ed estremamente complesso, di buona struttura e dal tannino fine ma grintoso; a livello gustativo, il tutto è bilanciato da una intensa parte balsamica, con note mentolate e di liquirizia in evidenza, e una profonda componente minerale, che dona verticalità, alleggerendone il carattere muscolare e le più scure tonalità iniziali, a vantaggio della beva. Finale di lunga persistenza.

Sottimano Barbaresco Pajore 2016
Second time trying this. On the nose, orange peel, spice, licorice, some mint and sweet herbs. On the palate, you get more of that orange peel, licorice, cherries, drying tannins, hints of bitterness. Quite elegant and light and showed better with some air. Still 93/100

Lovely Barbaresco. Elegant, floral, candied red fruit (cherry, watermelon, raspberry), tobacco spice, orange peel.

Good length, high acidity, moderate plus tannins. Opened beautifully over an hour.

A more elegant and traditional style that I love. Drink with a 1+ hour decant now or hold.

A shade darker than medium red. The nose is a class act, fresh with some glossy polish elements, alpine strawberries, dark cherry and sweet plum. The palate is burgundian in nature, it's somewhere between red and black on the fruit, sweet and dense, rich with considerable finesse. It's less tough than the Oddero '21, very compelling at the price point, and could keep for 5 years easily such is the structure. You sense the fruit (from young Barbaresco vines) is very high quality. I love it, it's the best Langhe I've ever had, and I cannot begin to imagine what the Barbaresco is like. I'm going to learn to cook Italian food and just drink this.

At this price point, possibly the best langhe nebbiolo I tasted so far. I was also impressed by its expressive nose of menthol, blood orange and strawberry compote amongst others. Substantial mouth presence with high tannins and acidity that crave food. Delicious.

Colour: med cherry red, thin rim, purple tinge
Nose: full, fresh, great depth, cherry, spice touch of sous bois, almost perfumed intensity
Taste: light body, rounded, good fruit, plums, cherries, good acidity and freshness, perhaps could be tighter knit, med finish, very red cherry and fresh.
Overall, the nose is better than the palate but it is a very good example from a great producer. Excellent with subtle Cantonese home cooking, viz steamed turbot with woodear, lily flower, and red dates, hainan chicken rice. 12.5% ABV which is great.

A quick tasting note after popping and pouring, and enjoying alongside some vegan mac and cheese. I think that's a Piedmontese specialty. Correct me if I'm wrong.

Medium ruby color. M+ intensity of aroma with perfumed rose, rosemary, and other dried herbs jumping right out at you. Just behind those, you get some cherry. and hints of anise

More to come here, but based on tannin this still needs time. Waiting at least 3 years for the next bottle

Tasty, but seemingly tiring. Lacked a bit of definition, and despite the acidity the notes were on the warmer spectrum: ripe fruit and some cocoa. A little bit of anise and truffle, and some slightly drying tannins. Decent, and nice with our pizzas, but not quite 'fine wine' on this showing.

Beautifully perfumed, with notes of darker and red fruit, some graphite, mint, some tar, but also flowery notes, overall elegant but structured. It‘s medium+ bodied with medium-high acidity and medium-high tannin that is overall very good but needs time to integrate. Long finish. A very good Barbaresco that needs time. (95+)
