Finishing Contract Lunch (Restaurante Cuenllas - Madrid): Superb for it was. Yeasty and very complex on the nose. Easy drink on the palate. Perfect for the lunch prolegomena.

Superior para lo que era. A levadura y complejo en nariz. De trago facil en boca. Perfecta para los prolegómenos de la comida.

Dim Sum Club at Ding Dong (Ding Dong, Ann Siang Hill, Singapore): Very nice. Rich and moreish, the nose wafted out of the glass with layers of treacle and molasses, dried figs and sweet Christmas spice. Really attractive. On the off-dry palate, a nicely rounded mouthful of red berries and dried cherries was seasoned with more of those complex spice and savoury brown sugar notes picked up on the nose. Fresh acidity kept the wine nicely balanced all the way into a richly layered finish of raisins, dried figs and Christmas cake infused with woody spice. With time, a nice hazelnut to tone started coming out as well. Very nice. This went well with both slightly spicy dishes as well as dessert.

Very dry, walnutty, a bit austere and aldehydic, almost bitter finish. This is made from a very similar solera as the Inocente, but aged longer and with oxidative aging at the end. I'm not a big fan of this Amontillado.

8 years old, the only bottling of Moscatel until you get to the Toneles. The line is that they call it Promesa because it promises to eventually become Toneles. I like this a lot, very fresh and cool-toned with a touch of mint, juicy and easy to drink.

Derived from the Manzanilla Deliciosa Pasada solera, which is not commercialized. Hugely concentrated, but rounder and more approachable than the Cardenal, I think, with orange rind, herb, and fig notes.

So concentrated with extreme great age are the flavors and the extract that the sugar is not really so noticeable, and the wine clings to the sides of the glass as a film, not legs, and barely drips down at all. For all that, it is lively on the palate, not thick in the way that PX can be, and loaded with ripe fruit, herb, coffee, chocolate, and old Armagnac-like notes. The finish is endless and the balance flawless. One of the great wines of my life.

Huge age and concentration, this cuts across your palate like a laser, with maritime, citric, sour, herbal, and peanut and hazelnut notes. The peculiar bitterness of very old sherry, which is highly savory if you love it, and the finish is so long it really doesn't leave until you consume something else.

I got two answers to how old this wine is, but I'll go with Jaime Gil who says its 10 yrs as fino and 5 years oxidative, which is pretty impressive for something that goes on the shelf at $24. There are lots of flor-influenced caramel and butterscotch notes here, and the color is much deeper than the Vina AB. Very dry and mature tasting. Super wine.

Aromatic to the bone. Salty yet shortie in the palate. Good to very good pairing some baked artichoques topped with bacon and foie.

Mejor esta vez aunque todavía lejos de lo wue un aficionado equilibrado calificaría como un fino extraordinario.
Aromático hasta la médula. En boca saladito pero muy corto. De bueno a muy bueno acompañando a unas alcachofas coronadas con beicon y foie.

The perfect aperitif. Starts off with preserved lemons and Marcona almonds and then goes into a sort of saline/chicken broth savoury phase before finishing with herbs, seashells, and hazelnuts. Long beautiful finish with a lovely round, but refreshing, mouthfeel. Summer in a glass.

Palo Cortado, natural born or quimical made? (Enoteca Barolo - Madrid): The most real Oloroso rather than PC of all the range of the tasting event. Magnificent nose, aristocratic and elegant with nuts and sour butter notes. Perhaps a secondary light medicinal touch without any annoying aspect.
Rich and generous in the mouth. Very long. Excellent.

El más oloroso de toda la gama de la cata. Magnífico en nariz, aristocrático y elegante con frutos secos y mantequilla agria. Quizás un secundario ligero toque medicinal que acompaña más que molesta.
Rico y abundante en boca. Muy largo. Excelente.

This wine has a lot to offer as an aperitif on its own, with tapas, or with a main course. I found it paired well with chicken as well as fish. It is more on the full-flavoured side for a fino. All the classic nuttiness along with freshness on the palate and a pleasant finish. A very good fino.

Savory salty notes with near-roasted nuts/almonds; great intensity, character, a bit more rounded off than a straight Manzanilla, but still nice and zesty. Lovely balance, character, and would be good on its own. Too light with pork belly--an Oloroso would definitely be the way to go.

Racion: Very dry, aldehydic, fresh blanched almond, marcona almond, salty, chemical nose, new car smell, in a good way! Clean mouth, fresh, light on the palate. Score depends on food. With nuts, good olives, anchovies--91. Killer with light tapas, salty things, olives. Very refreshing. Keep chilled.

Nose of raisin and yellow delicious apple. Flavour is crisp and strong with an underlying taste of Brie and oak. Very nice.

Color anarillo dorado bien brillante y limpio, fina lágrima bien abundante. Notable intensidad en nariz que resulta bastante punzante al principio tras abrir la botella y que se va suavizando a medida que se va oxigenando un poco, surgen las clásicas notas de crianza biológica muy marcadas, frutos secos con recuerdos de almendra pelada y rallada, sal seca sobre la madera, maderas nobles muy finas, sensaciones de tiza y tierra seca. Muy buena entrada en boca con una suave cremosidad, muy buena acidez, notas amargas muy marcadas, almendras saladas, intenso y punzante pero bien elegante y atractivo, sedosa textura y bien persistente. Final bien largo y punzante en su postgusto y retronasal que rememora su crianza biológica.

Pale yellow color. Aromas of yeast, nut skins and saline. Medium-bodied, ripe fruit in the mouth with very good depth and length. Unusually full and persistent on the palate for a fino and delicious with the tapas at Torero Restaurant. Cellared since 11/13, this bottle may have lost some freshness, however, as I found it a touch low in acidity which prevented me from giving it a higher score.

Color caoba intenso, ribete tonalidad yodada bien brillante y gruesa lágrima bien lenta y bien tintada. Nariz con una notable intensisdad en la que se empieza a deducir su complejidad, notas de frutos secos (almendras tostadas), maderas viejas con barnices (ebanistería), suaves matices licorosos que van resultando más punzantes a medida que nos vamos acostumbrando en nariz a apreciarlo, higos secos y ligeros orejones muy secos, cáscara de naranja seca, toques de chocolate y cacao en grano, tabaco de pipa y suave fondo salino y ligero matiz que recuerda a un Pedro Ximénez viejísimo. Notable entrada en boca con un magnífico recorrido amargo y bien seco, excepcional acidez que le aporta mucha frescura, frutos secos (almendras, avellanas y nueces), fina salinidad que contribuye a magnificar su carácter sanluqueño, armonioso, concentrado, muy voluminoso que consigue llenar toda la boca y estremecer todo el paladar, monstruosa persistencia que engrandece el conjunto. Final muy largo, postgusto de frutos secos y retronasal ahumado.
¡ Excepcional !
