Getting pretty close to the sweet spot after only 20 minutes. Flavors of wild boysenberries initially with a good measure of white pepper, then a significant wave of (Rutherford-like) dusty notes 20 minutes in, after which it starts tapering off, softening out, and eventually loosing the alcohol/acid-body balance 90+ minutes in.
In a perfect place right now as a pop-and-pour.
13.8% ABV.

Full-bodied, with a plummy mouthfeel. According to my girlfriend it tasted like liver for the first 90 minutes. By the time I got to it, it tasted pretty good to me. Seemed to start getting more acidic 3 hours in. 13% ABV.

Notes of Turkish apricots indeed, but botrytis seems to be only minimal. Full-bodied, viscous, with lemon rind notes on the backpalate and a long finish of dehydrated apricots. Could use a bit more acidity. 12.5% ABV.

A blend of Syrah, Grenache, Carignan, and Mourvedre. The Grenache fruit is quite notable, whereas the Syrah is providing structure and could be perhaps mistaken for Cabernet Sauvignon. More of a food wine overall, like most Languedocs I have tried. Needs a heartier, meatier meal. 14% ABV.

Started opening up after 45 minutes, and seemed to really bloom 90 minutes in. Medium-bodied, perhaps more at the lighter end of the spectrum, with notes of dark cherry, anise, and a cornucopia of savory herbs, the latter both on the nose and palate, and even more so on the finish. It appeared to have reached its peak 2 hours in. 13.5% ABV.

An excellent Carignan. Comes through as a bit sour at first, but over time the palate gets accustomed to the profile and the wine keeps growing on you. Quite food friendly too. 12.5% ABV.

Terribly quaffable right upon opening, medium-bodied and silky, with round tannins and a minty leitmotif. 75% Cabernet Sauvignon, 17% Merlot, 4% Malbec, 3% Cabernet Franc, 1% Petit Verdot. 13.7% ABV.
Update: was still drinking excellently 24 hours later, after having been vacuum corked and stored in the fridge.
