The first sip though, is full of piercing lemon-y acid, muffling the red apple notes behind it. Gave it 20 minutes of air and the acid tempers, but the wine gives off lemon lime soda notes. Another hour and it settles into spiced apple pie notes which I quite enjoy. I’d keep hands off this for quite awhile. |

Aromas of bruised apples, custard, hazelnut (oak?), Meyer lemon, slightly stewed wild strawberry, oxidative notes. Very fresh yet with supporting fruit concentration and length. Creamy mousse. Mineral. Extremely long. Others mentioned Bollinger-like. Great value, I wish had more. I will enjoy the other bottle in 5 years. |

Not sure the dosage on this but it was drinking just very slightly sweeter than I would have liked—that’s my only complaint. As a longtime fan of the Champagnes by Paul Dethune, the Cuvée Prestige “Princess des Thunes” pours a brilliant golden color with a persistent mousse. On the nose, loads of brioche and lightly toasted croissant, lemon bar, meringue, raspberries, Marcona almonds, honeysuckle and chalky minerals. On the palate, the wine is dry. Acid is medium+. Confirming the notes from the nose. The texture is creamy, with an almost oily character as it warms, giving this a rich, almost round impression of the fruit. No doubt the generous addition of reserve wines going back the last four plus decades contributes to this richness. The low dosage acts like a bustier giving a very appealing, sexy lift. |

3/5/2023 - NYC_Maenad Likes this wine: NRServed in Lehmann Jamesse Prestige stems after a brief chill. At first lots of red apple, followed by more strawberries and white chocolate on the nose. Lively mousse, middle weight mouthfeel. Nice richness and gentle acidity, appealing flavor profile with the quality of the fruit evident. Fresh and not heavy. Could it have had a bit more tension and complexity? Sure, ideally, but at this pricepoint it was a very nice example of type. Paired well with some Midnight Moon cheese and Smoking Goose rabbit and pork terrine. A note to the cult of low dosage that you lose flexibility when you insist on level. 9 g/L may not be my most preferred style, but sometimes my most preferred style would not be the best pairing.
