2003 Roger Sabon Châteauneuf-du-Pape Le Secret des Sabon

Red Rhone Blend more

Dinner with Neeta and Manoj at our house. Second bottle opened as first one was corked. Decanted for 2.5 hours before drinking. Drank next to an 00 Clos des Papes, the decant was good for both wines, really showing well by dinner. Drank over 2 hours. Paired with my brick Chicken Toscana and Lemon/Dill potatoes.

Consistent with prior notes:" Dark purple/velvet color. Intense black fruits on the nose, black cherry, spices....While its a fruit forward wine, it didn't drink as heavy. Long finish with blackberry, cherry liqueur, black pepper..." Great finish

Texture of this wine is quite elegant for a bigger styled fruit CdP. The group loved it with a slight edge to the Clos des Papes. In a good spot right now, seems it should hold at this level for 3-5 more years (best guess).

Dinner with Neeta and Manoj at our house. Decanted for 2.5 hours before drinking, really allowed the wine to show from when first opened. Drank next to an 03 Secret de Sabon, paired with my brick Chicken Toscana and Lemon/Dill potatoes. Well stored bottle from my cellar...had to blow the dust off this one...

Bright ruby color, no browning. Nose of dried red fruits, baking spice, cedar, some smokiness. Palate of dark cherry, plums, herbs, spice/cinnamon. Mid palate showed savory notes to complement the fruit. Long and layered finish.

Great example of well aged CdP, this bottle was in a perfect spot. Should hold at this level for another 3-5 years (IMO). Drink now.

Dinner at our house with Neeta and Manoj. Drank after a Cardinalys White Rhone with appetizers...PnP, slightly chilled.

Medium gold color. Lemon, pineapple, orchard fruits, apples, light oak. Citrus notes are framed nicely with the acidity. Medium mouthfeel and creamy finish.

Last bottle, wine is drinking very well right now, will not likely improve much from here

Dinner at our house with Neeta and Manoj. PnP, served slightly chilled with cheeses and homemade tapenade. First bottle from a stash bought at the tasting room in CdP. Drank over 45 minutes, was ready out of the bottle

Consistent with prior notes: "Crisp fruits on the front palate, Rhone profile of green apple and quince...great minerality on mid/back palate..."

Very nice white Rhone, not a varietal/region that is well known in the US. Versatile on pairings, this would go well with fish, poultry, pork.

At home with pizza, haven't visited this wine in a while...other bottles from the 05 Willamette vintage have aged nicely. Splash decanted, drank over 2 hours. Was fully opened in about 20 minutes.

Medium/light ruby color, clear, mild signs of aging at the rim. Earth dominant nose, red fruits, spice. Palate of bright red fruits, dusted strawberry, cherry cola, baking spice. Tannins integrated, medium finish.

Right in its zone, elegant and feminine wine. New world fruit, Burgundian style and feel. Should hold at this level for a few years but do not think it will improve much mire. Excellent example of BF wine that's aged nicely

At Milos in Miami, recommended by the somm. I don't have broad knowledge of Greek wines but always enjoy them...was looking to pair with grilled fish.

Pale yellow color w/greenish tinge. Nose was citrus, orange peel. Rounded and fruity palate of citrus, lemon, apricot. Medium mouth feel and finish. Could have mistaken for a Sauvignon Blanc w fruitier profile. Excellent pairing for the fish/veggies and Greek salads. Would also make a good Summer aperitif

PnP, drank over an hour. Would have benefited from a decant.

Purple/red color, good clarity, no sediment. Nose of dark fruits. Palate of dark and red fruits, plums, spice, cocoa. Medium mouthfeel/body, very smooth.

Still very young, a few years in the bottle should add some weight and help secondary characteristics show more.

At home with cheeses before dinner. Served only slightly below room temperature and in goblets, allowing the fruit to show.

Consistent with prior notes: "Apple, citrus, caramel, apricot on the nose. Palate had pear, honey, apples and coconut. Oak was classic California but not overwhelming (IMO). Finish was butterscotch and creme brulee."

Well made wine, rich and buttery but not overpowering to the fruit. This is a great Chardonnay from a great vintage...

At home with Valerie and Eileen, with a mild spiced Turkey Chili. First bottle from a batch bought at the winery. Threw a fair amount of sediment during the decant, strainer caught some. Some grittiness to the wine from sediment. Decanted for 30, drank over an hour. Decant really allowed the wine to show, was tight when first opened.

Deep purple color, bright and youthful. Dark fruits, earthy, bacon fat. Palate is like a Northern Rhone earthy profile...black fruit, grilled meats, smoke, spices. Rich mouthfeel, long finish.

Very nice wine, right in its zone and pairs well with winter fare and cheeses. Should be at its best over next 5-7 years. As others have pointed out, this overpriced for what it is/origin. It is a well made wine but there are better choices at this price point. Would be appropriately priced below $75

At home in Princeton with Val's chili. First experience with this wine, bought on release...Splash decant.

Color is light garnet/purple, translucent. Nose is "green/herbal characteristics, green pepper, olives with dark fruits behind it. I recall this was whole cluster, nose suggests its not integrated. Blue fruits, rhubarb, roasted meats, savory notes, black olives, black tea. Spice and black pepper very pronounced on the finish. Medium/light body and medium finish

Acidity frames this wine nicely. Would describe it as "interesting", especially for the varietal. Not a typical Syrah - new or old world - and may not be for everyone. The stage of evolution is hard to pin down (for me) as it may just be where its going to be or start to put on some weight and loose some of the green characteristics...seems to be a good bet to let it evolve a bit.

In OC with Dad and Frank, splash decanted and drank over 90 minutes. Drank after an 08 Realm Tempest

Dark velvet/purple core, no signs of age at all. Nose was dark fruits, lavendar. Concentrated and fruit forward at this point. Dark fruits, blueberry, cassis, cedar and chocolate. Quality of the To Kalon fruit is evident. Still very primary. Rich mouthfeel and long finish.

This is a classic, hedonistic To Kalon Cabernet. I think time will allow it to start to show more of its secondary flavors. I have a few magnums that may need 5+ years. That said, the wine is great now, it would benefit from a longer decant than we allowed. Great stuff with a very long drinking arc in front of it...

This is in a great spot right now, would pair with a variety of meats, rich dishes, winter fare...what you want from Syrah driven Rhone. Should hold this level, not sure it will improve much.

At home w/Valerie casual dinner. Last bottle from a stash bought on a Napa trip years ago. Decanted for about 30 minutes, drank over 90 minutes. May have benefited from a longer decant than we allowed, wine evolved nicely in the glass

Great color, wine showing little signs of age. Consistent with prior notes: "Nose of black fruits, cassis, chocolate, leather, cedar. Palate of dark fruits, cherries, dried herbs, tobacco. Was very rich on the mid palate. Medium/long finish, rich fruit and savory notes."

This is a big and rich California Cab that has refined and mellowed to a very good spot. Aged beautifully, should be drinking at this level for a while. When purchased i wasn't sure what to expect, this surprised to the upside on both quality and longevity...should have bought more. Good stuff!

Color was still a good garnet core, mildly opaque. Great nose, still youthful with dark fruits, leather, cocoa and oak. Palate was classic, unmistakable Grange. Dark and blue fruits, cola, blueberry, leather. Evolved nicely in the glass over 30 minutes, picked up secondary and tertiary characteristics of burnt sugar, honey.

A gorgeous, well-aged Grange. In a great spot now and should continue to drink well for some time. Well aged Aussie fruit that adds elegance to the power and uniqueness of this wine. Would have benefited from a longer decant than we allowed

Ovid is always an interesting and well made (IMO). This blend only at 47% Cabernet, Cab Franc component softens this wine. Nose shows red fruits, herbs. Palate was red and blue fruits, blueberry, black cherry, savory notes, cocoa and integrated oak. Rich mouthfeel and long finish.

Rich inky/garnet color, vibrant core, no real signs of age. Beautiful nose of red fruits, blackberry, floral notes, baking spices. Palate of ripe black cherry, licorice, smoke. Oak on the finish, well integrated. Long and layered finish

This is an amazing wine...Big but sill elegant. No doubt it will drink well for a decade+ from here. The wine is showing secondary characteristics perfectly. The slow ox/decant made a big difference, allowing it to settle in and display its complexity. After 5+ hours open, this was still a wine you could linger over for hours, changing in the glass

This was my WOTN and for a number of our group. Especially impressive for those with palates/tastes leaning to European wines... very special wine
