Took an hour or so to open up but when it did it was still extremely youthful. Showing a decent bit of wood. Very solid acidity. Very Chablis like. Lemon and salinity. Really nice but could go for another 5-10 years. I've had nothing but youthful bottles of this 04 Preuses and I plan to let my last bottle go the distance.

This took time to open up and needed lots of air to really show anything beyond a tight and youthful classic Chablis. Was better the following day and thoroughly enjoyable but really needs another 5 years at least. Always good stuff.

Served alongside the 95 Jamet CR. Both quite youthful and should easily improve for another 5-10 years. Darker (blackberry) and more iron then the Jamet. Had this classic salinity going on on the nose. Structured and balanced. Excellent.

Bit more polished and floral than the 95 Chave it was served with. Same level of quality as Chave but slightly different in style. Touch more red fruited in comparison. Both could use at least 5+ more years. Excellent.

Compared to the 08 Levet Chavaroche, this had more structure, darker profile and will probably benefit more from further cellaring (5-10 years). Like the Levet, perfectly drinkable now though. Leaner vintage and quite classic. Blackberries and hints of meat and earth. Probably more potential upside here than with the Levet. Really nice earlier drinking Chave. Drink or hold. Excellent.

A heavier, richer and more powerful with compared to the two bottles of Krug. A large and powerful nose. Really nice acidity on the finish. Finishes fresh and bright despite the bigger richer profile. This has incredible intensity with enough freshness to avoid being heavy or overdone. A really special bottle of Champagne and a treat to taste. Outstanding.

Bottle 2 - More vibrant and energetic than bottle 1. Similar developing notes but with more energy and freshness. Beautiful citrus, pear and wet cement aromas. Incredibly long on the palate with great precision and balance. Still showing some youthfulness. Probably the best bottle of Champagne I've ever had the pleasure to taste. Extraordinary.

Bottle 1 - Showing more age than the second bottle with more baked fruits and apples notes. This bottle was fantastic and seemed fresh and energetic until the second bottle was opened and showed even more life, energy and vibrancy. Outstanding.

Blind December Lunch (Lupo): Tasted blind. At first sniff this seemed to be either a riper Bdx or a classic Cali cab from a traditional producer. Sweeter cab fruit with hints of bell pepper. Nice structure with sweeter fruit and balancing acidity on the palate. This bottle seemed a bit riper/sweeter and slightly less fresh/youthful than a bottle several months ago. Drink or hold. Excellent.

Blind December Lunch (Lupo): Tasted blind. This and the previous wines both have Italian noses...both could be nebbiolo. This one has similar dark fruits but less sweet and more floral tones. No oak that I can detect. Slightly more tannin in this one. This wine also seems more traditional and more reserved. Maybe a 96? Prefer this wine by a small margin. Seems more classical. Excellent and drinking well but should go for another decade easy.
