Nose: The nose is power packed with brioche, red apples, creams, biscuits, vanilla, some earthy notes, and baking spices. There is a ton of layering and uniqueness to it where you just have to pay full attention to it.

Taste: Full bodied with high acidity. This is classy and elegant on the palate with a real richness to it along with brioche, red apples, creams, vanilla, and some earth notes.

Overall: Lovely! This was one of the more unique Champagnes I had. I was told that this was their interpretation of a much older style of champagne. If it is or isn't, it's awesome stuff.

Taste: Medium bodied with high acidity. The structure is certainly youthful, but it isn't overpowering with white florals, apples, white fruits, crushed rocks, almonds, and a doughy finish.

Overall: This was lovely. It's younger, but it wasn't inaccessible. This could use a couple of more years, but, it's not for long term aging.

Overall: This is certainly on the young side, but it is ever so lovely. This will be extremely interesting to try in a few years when it has gained even more age.

Overall: This is a poised and elegant young champagne. The Pinot noir shows through and it makes for a really enjoyable bubbly.

Taste: Full bodied with medium/high acidity. The acidity is certainly there and it shows off the relative youth of the wine. There is also slight oxidative note to the wine that is rather attractive along with brioche, baked bread, red apples, some wood, and berry notes.

Overall: Exquisite! This was a real treat and highlight. All of the wood is sourced from the Argonne Forrest and this just has a level of poise to it that makes you want to stop and just take your time with it.

Nose: The nose was a bit reticent and shy at first, but, when it opened there was a nuanced rusticity to it with dark red cherries, earth notes, spices, leather, and dark red berries. There is a lovely layering to it as well with an understated quality.

Taste: Medium bodies with medium+ acidity and medium+ tannins that provide a good spine. The structure is still quite present, but it doesn't overwhelm. The rustic quality of Pommard is there with dark red cherries, earth notes, dark red berries and some spice tones. What is also there is the nuanced and understatement as well.

Overall: This was a very pleasing bottle once it opened up. It needed about 2-3 hours of air after first pouring, but patience was rewarded. This is yet another transparent and lovely Bouree that captures the imagination.
