Light peach aroma and a full, round texture. The acid didn't kick in until it hit the back of my palate. If I'm pairing this with food, I'd like to see more acid. But it's enjoyable on its own, and at this alcohol level I don't *need* food to enjoy a glass or two on a hot day.

Dark cherry and spices on the nose - almost zin like. Mildly tannic. This would be a great pairing with a peppery stew.

The nose was interesting if restrained on day one. Out of the gate, it was borderline too thin for my tastes. On day two it's weedy and tart. Good acidity, so it might show better with the right food. But these days I do much of my eating standing up at the kitchen counter, so I'm looking for something that will stand on its own.

Black licorice on the nose, and a savory/umami note. Dark fruit and pepper on the palate with prickly acidity. Nice wine.

Very subtle "green-ness" on the nose and a little oak, clove, and cardamon. "Mouthfeel" is not a quality that makes a big impression on me, usually, but this is an exception. Light and silky. Very pure cherry flavor and good acidity. Would go well with food, but doesn't need it to show well. I'm glad I finally broke down and joined the club.

Incredibly smooth - it's hard to imagine a spirit with better integrated alcohol. The fruit flavor (apricot, maybe) really sets it apart. It's not a flavor I typically associate with bourbon, but it's great. A truly special bourbon.

The tannins mellowed with an hour or so of air and it rounded out nicely with food. Herbs, rather than fruit, is the overriding impression.

High-toned red fruit. Didn't get a lot of typical cab flavors out of the gate, although it showed more with air. I think I'll hold onto my other bottles for a couple years to see where they go.

I get the graphite other tasters pick up, menthol too. Some meaty/smoky undertones, but for me, those "cool" aromas predominate. The meatiness picks up on the palate, along with red fruits. Intense, especially the nose, for a lighter-bodied wine. The tannins bite down pretty quickly at this point. I think it could use some time for the palate to catch up with the already compelling nose. Great value from the Novy as usual.

The 2007 vintage of this wine was one of the wines paired with Next's (Chicago) Kyoto menu. I was surprised to see an Aussie wine at Next/Kyoto, and pleasantly surprised at how well it paired with the last savory course. Both the 2007 and the 2008 have the acidity that I've found lacking in other Shirazes. It won't be mistaken for a Northern Rhone, but it is balanced and enjoyable if you appreciate wines on the riper end of the spectrum.

Deep black fruit and a serious spiciness - think white pepper. Definite sweetness, but the pepper makes a nice foil. Alcohol is in check (especially compared with a 2007 Carlisle Vineyard I had recently). A great wine on the fruit-forward end of the spectrum.

Big tannins, so if that's a problem for you, hold off drinking this now. A deep red color, and an herbal nose - I'm not getting the barnyard aromas that other bottles are apparently showing. Very clean, and weighty after it had been open awhile.

Nose is reserved right now, and the tannins are a tad aggressive. But the black cherry fruit is pure. It's good now, but I can see it developing into something quite nice in a few years. That's saying a lot for a wine in this price range. A note about my particular bottle: Eric Keating promptly replaced my earlier corked bottle without my even asking. That's integrity (and good business).
