April 17, 2011 - Popped and poured. Very deep garnet-red color with very little lightness at the rim. Nose rather closed at with scents of beets, a dark fruitiness and some earth. With time, about 1 hour, it opened to reveal iron, violets, more fruit, and sous bois. Supple and balanced on the palate with fruit, acid and moderate tannin all in harmony with one another. Long, rather tannic finish. Drank from the winelist at New Sammy's Cowboy Bistro in Talent, Oregon to accompany green garlic flan with morels and asparagus, and mustard crusted rabbit with black trumpet mushroom risotto.
