November 9, 2008 - There is a little spice from the wood, some freshly churned butter then all following traits are straight from the Chablis textbook. Intense smells of fresh lime, oyster shell, mint and fennel. In the mouth there is terrific volume and intensity with the oak imparting a little creaminess but there is also plenty of squint inducing, citrus action and terrific line. This is very young but you’ll get a decent run for your money should you be silly enough (like me) to open one now. It has such great definition and precision that I reckon if it was shown alongside a top flight of Chevelier-Montrachet and Corton-Charlemagne it would more than hold its own, the best Fevre Les Clos from 00-06
