    February 16, 2013 - Decanted for an hour (half the bottle, saving half for tomorrow). Some carbonation. Complex and fairly strange but good nose; lots of pear, honey and beeswax, with milder oatmeal and leather, and fleeting brown apple oxidization. Predominantly honey soaked pear on the palate, with milder notes of grain, olive oil, and wool. Just off dry, with good acidity and some savoriness. Mild overt oxidization. Fairly long finish, going completely dry with a noticeable nutmeg note emerging.

    The second night, pear and honey are still the main components, but almost completely dry, oxidization is showing a bit more, the long nutmeg finish has a touch of bitterness at the very end, and it's more cohesive overall. Even better than the first night, for my taste.

    Slightly awkward - even more intense acidity might work better with the oxidative notes - but overall, this is interesting, fairly complex, and quite tasty. I enjoyed it.
