  March 1, 2013 - I still have not learned my lesson about keeping my hands off of these. One more year minimum for this to get anywhere near it's true colors. After 4 days open in the pantry, the final 2 glasses were sensational. The tartness resolved into a smooth and graceful elixir and the bouquet blossomed out to allow a whole bunch of new flavors to emerge.
