    May 29, 2013 - Day1: Slow ox for 3 hours.

    From what I’ve read, this is very much what I imagine Chambolle to be …very feminine.

    The wine has a beautiful nose of light red fruit, a touch of spice, sous bois, and a scent I equate to “autumn tea leaves.” (not sure how else to describe it.)

    The wine has a very nice mid-weight palate. Very little attack, but the mid just drips with soft red cherries. The acid was well balanced. Very fresh and crisp, but still a bit tender. The acid keeps the wine lively, but does not dominate. There are just enough tannins to hold the backbone. Beyond that, they are very unobtrusive.

    The only dissonant note is the finish. It is short to mid length, but it doesn’t end crisp, leaving you wanting more. Its more like everything fades away leaving a bit of heat and green tannic flavor. Its strange because those flavors aren’t in the wine until the very end. It reminds me of listening to a symphony where all the instruments in harmony slowly fade away leaving only a kazoo to play the final note.

    Strange ending … Will see how it changes on Day 2.
