I have drank a lot of syrah since that time, my tastes have also changed so I appreciate revisiting a bottle as this one, especially this vintage of Pax, which I still believe is the best he made. I opened this wine about 90 mins ago, no additional decanting. Classic whole cluster nose of smoke, herbal and florals--really quite distinctive. Texturally, this has some weight but it's balanced by the iron, cherry, tar, menthol, soy and blackberry notes that add a softness to the palate. The acidity feels about right to me now, with this level of aging, and it freshens the fruit and brightens the finish, which shows a gamey/savory note, much like some of the leaner Wind Gap syrahs like the Armagh vineyard that Pax is making today. There is some residual tannin here but I'd say it's mostly integrated at this point and seems like the wine is in the optimum window. Finshed through dinner, where olive and dried flower became more prominent, too. The drink window for me would be now through say 2016. Like the 2005 Castelli-Knight (which is drinking fantastic and is more youthful then this Keltie) and the 2005 Alder Springs Terraces I drank last week (which is doing great), these 2005 Pax wines are just super.
