    August 15, 2014 - Clear ruby red, deep, floral nose with spice cake and sweet plum tart. A background note of eucalyptus. There is a sense of limestone and mineral. The nose in its current state is beautiful.

    Started at cellar temp, but the nose and flavors really opened up after 1 hour. Rich, mouth filling flavors of tart cherry, with spices in the back of the palate. There is perfectly balanced acidity and the tannins are fully integrated. The mouth feel is silky and full. We drank this with a capellini dish with sage infused brown butter and the acidity was a perfect accompaniment to the rich herb flavored butter.

    My final note is that you can drink this wine right now and have a seriously beautiful bottle of Burgundy. You could also wait another ten years and be treated to a wine of another dimension of secondary and tertiary flavors.

    Drink it now and be amazed, but make sure you have another bottle to see where this baby is really headed. Either way, you will not be disappointed.
