White - Sparkling
N.V. Bruno Paillard Champagne Brut Premiere Cuvée France, Champagne
Disgorged 03/2011. Plenty of yeasty bread aromas on the nose along with some fresh ginger spice, crushed almonds, rich red apple skins, lime, caramel, and a spritz of tangerine citrus. Tons of tart green apples on the palate with more almonds and plenty of spice, along with a firm backbone of lemon zest. A bit tart on the finish with plenty of lime and a touch of heat. Overall quite reserved on the nose, displaying a bit more depth on the palate with a crisp citrus finish and laser like acidity. Good+
Rosé - Sparkling
N.V. Louis de Sacy Champagne Grand Cru Brut Rosé France, Champagne, Champagne Grand Cru
Quite funky on the nose displaying rich oxidized red apples along with bright strawberry and raspberry fruit. Slightly steely and tart with a touch of spice. Plenty of spicy ginger in the palate, along with more earth, rich pear, tart raspberries, and green apples. Hints of lime and crisp lemon citrus on the finish with firm acidity. This was quite interesting, with nice elegant fruit on the nose and some earth and fairly Burgundian in style, followed by some more rich earth on the palate with nice raspberry fruit. Very good.

2006 Château de Beaucastel Châteauneuf-du-Pape Blanc France, Rhône, Southern Rhône, Châteauneuf-du-Pape
Gorgeous nose with tons of complexity. Really waxy and soapy with tons of white flowers, along with some pitted orchard fruits, honey, and orange blossoms. Just lovely. Rich with a viscous and oily mouth-feel on the palate, displaying tons of spice upfront in the form of white pepper and ginger, followed by white peaches, fresh lemon, rich pears, and tons of wax. Complex, layered, and delicious. This continued to improve as it sat in the glass, unfortunately my glass didn't last long. Showing well already with some air but I'm going to let my bottles sleep at least a few more years. Fantastic

2007 Domaine William Fèvre Chablis Grand Cru Les Clos France, Burgundy, Chablis, Chablis Grand Cru
Some waxy hints on the nose along with tons of saline and white flowers, plus green apple peels, lime, pears, spice, and some nice floral orange blossoms. This has a crisp lemon backbone on the palate, showing red apples, pears, floral orange blossoms, crushed limestone, sea salt, a touch of caramel and some lime towards the finish. This is wound up pretty tight on both the nose and palate as it should be, but what delicious underlying components. This will be great with some more cellar time, let these sleep. Very good+

2007 Yann Chave Hermitage France, Rhône, Northern Rhône, Hermitage
Really tightly wound on the nose displaying plenty of funk, along with spicy black pepper, iron, black olives, moldy cellar, and a hint of blueberries. This has a nice richness on the palate showing tons of ripe blackberries, black pepper, dark plums, black currants, along with some flowers and rosemary herbal notes. Would up and not giving a ton at this early stage but what a lovely profile. Great underlying muscle and ripeness with plenty of potential. Very good+
Red
1999 Tardieu-Laurent Côte-Rôtie France, Rhône, Northern Rhône, Côte-Rôtie
Very rich and expressive on the nose showing tons of bacon fat and meat blood, along with some ripe blackberry, olive tapenade, and some herbal notes of rosemary and sage. Good spice as well with some white pepper and floral violet notes coming through. Plenty more bacon and meaty notes on the palate yet this time leaning more red fruited showing cranberries and red currants. Not as rich and lacking the depth on the palate, with tons of tart red fruit compared to the rich black fruit core on the nose. Still very enjoyable, but a bit of a letdown after the promise of the nose. Very good-

1995 Paul Jaboulet Aîné Hermitage La Chapelle France, Rhône, Northern Rhône, Hermitage
Tons of classic white pepper spice and olive tapenade on the nose, along with some tart blackberries, rosemary, mint, and some meaty blood notes. Plenty more white pepper and olive on the palate, along with a core of rich black plums, licorice, white flowers, finishing with a hint of cooling menthol at the end. There are some chalky tannins on the finish, but this is in a nice spot right now and drinking well and no rush at all on these. Showed a fair bit of leafy and herbal notes, but good fruit to balance things out. Fantastic

2005 Ovid Red Wine USA, California, Napa Valley
Super rich and concentrated on the nose with tons of ripe blackberries and blueberries, along with some spicy black pepper and a touch of menthol. The richness carries through onto the palate flashing more rich blackberry jam and a core of black pepper spice. Along comes some fresh mint, raspberry liquor, and charred oak. This is an absolute monster of a wine showing a touch of heat on the finish. There is no doubt this is well made wine, but not for everyone nor is it necessarily my style. No shortage of fruit here, a bit too sweet and cloying for me. Very good-

1997 Robert Mondavi Winery Cabernet Sauvignon To-Kalon Vineyard USA, California, Napa Valley, Oakville
Great nose kicking off tons of lead pencil graphite and rich black cherries, along with some licorice, tart Bing cherries, menthol, and a touch of musty old cellar. Plenty of earth on the palate along with more rich black cherries, spicy black pepper, and finishing with some fresh mint. There is cedar and graphite as well with a touch of sea salt. Classic Cali Cab that's entered its peak but still has plenty of life ahead. Very good+
