Introduction

When I think back to the wines that made me turn the corner from a novice to a collector, the 2005 Baumard Cuvee St. Catherine is the wine that pushed me over the line. So it was a great pleasure to get to meet Florent in Chicago and taste a wide selection of his wine.

Thanks to the guys at Domaine for hosting us, and the team at Wine Discount Center for organizing the tasting.

Crystalline, and edgy I liked this wine's steeliness. I didn't find a ton of fruit in this wine...maybe some pears, but this was super crisp. Interesting to learn that this was 60% cabernet franc.

I liked the peach and floral tones to this wine, but wished it had more acidity. Some where comparing it to a Rhone white, and while I wasn't getting the viscosity I usually associate with the Rhone this was a plusher/richer/fatter style than what I typically look for.

Florent described how this cuvee differs from the "regular" and it really has to do with the inclusion of berries with subtle boytritis. This definitely had a richer, more found character...a hint more cherry, peach, and floral notes. The palate was a touch creamier too than the regular cuvee. Still wasn't super crisp...wish it had an edgier personality.

You could tell this was from a warmer-than-usual vintage. The acidity was relatively low, the flavors were rich and there was an oiliness to the palate. Lots of peach, cherry, some lime, and lemon. I think it was one of the more unbalanced wines of the tasting.

This was the first real home run of the tasting. It had a beautiful nose of cherries, peaches, a hint of lychee, and some waxy lemons. The palate was rich and full with loads of tropical fruit, and florals. What distinguished this from the 2009 Papillon was its beautiful acidity. It gave it great balance. Florent commented that this is a more classic vintage of Papillon, and I certainly agree!

There's something beautiful to me about this wine. The aromas smelled of fresh soil, bell peppers, cranberries, cherries and some fresh tobacco. The palate is fresh, red fruit driven, with soft touches of earth and florals. A pure wine.

Tropical explosion! Pineapples, lychee, mango, flavors were dense and rich and there was hardly any acidity to be found. Not too surprising given the vintage, but it was disappointing that this was so super-ripe.

Very impressive. Lots of big-time tropical fruits here; peaches, mangos, lychee, and pineapples. There was so much acidity here that kept it fresh and perfectly balanced. Just delicious wine that's got a long life ahead.

A hair below the 2008...the flavors were all there, but the acidity was a touch less prominent. Just shows how important acidity is in keeping a wine balanced.

I hadn't had this since 2010, and it was still holding steady. Great flavors of pineapple, lemons, limes, lychee, and peaches. I only had a small taste of this, but the acidity was there. Everything seemed in a good place.

Had a lot of big tropical fruit and florals. The warmth of the vintage was there as the acidity was muted a bit. The florals seemed more pronounced on this bottle compared to some of the other QdCs. Unsure how long these will age.
