Introduction

29th birthday

Flight 1 (1 note)

With the first course - fresh Maine oysters

White - Sparkling
2007 Deutz Champagne Blanc de Blancs France, Champagne

Excellent; absolutely loved it. A blanc de blancs just coming around with lots of classy light fruit, aromatic floral notes, citrus, a touch brioche. Layers and depth. Elegant and fine-boned; I don't like champagnes with a lot of fat. My idea of vintage chardonnay champagne and a great time to catch it.

Flight 2 (1 note)

With the second course - herb crusted goat cheese rounds on toasted baguette on a green salad with a lemon vinaigrette.

White
2005 Domaine William Fèvre Chablis Grand Cru Bougros Côte Bouguerots France, Burgundy, Chablis, Chablis Grand Cru

Very enthusiastic about this - excellent Chablis just starting to drink beautifully. Fleshy Chablis fruit with briny ocean notes, wild flowers; perfect balance and a long finish. Just about ready now.

Flight 3 (1 note)

With the third and fourth courses; veal chops Dijonnaise followed by the cheese course - mimoulette, brebis rousse, galette de cher, chevrot, and beaufort.

Red
2002 Alain Hudelot-Noëllat Chambolle-Musigny 1er Cru Les Charmes France, Burgundy, Côte de Nuits, Chambolle-Musigny 1er Cru

Wonderfully Chambolle. Plenty of fruit; ripe, maturing. Cut by a refreshing streak of bloody mineral. Notes of game, cinnamon. Deep and long. Early maturity now. Interestingly, best in the first hour or so - the mineral became medicinal, almost Robitussin and less enjoyable for it. 94

Great day for family and wine. We all had a fun time reminiscing about our family trip to Burgundy over these excellent wines.
