Flight 1 (3 notes)

White - Sparkling
2004 Dom Pérignon Champagne France, Champagne
94 points
Light gold color. Drank 2 glasses over an hour plus. I brought this bottle to toast and celebrate the 20th anniversary of one of my staff with us and it certainly did not disappoint. A wonderful and youthful Dom in all its glory. The nose is powerful with beautiful toastiness, lemon, mineral, and hints of marzipan. Great depth on the palate with a creamy, delicious mousse, lemon, toast, mineral, pear, deep and flavorful, clean and long. This is just a youngster, but already so tasty. 94(+)pts.

Red
2000 Château Prieuré-Lichine France, Bordeaux, Médoc, Margaux

Very dark red/purple color. slow ox for 4 hours and double decanted for an hour; drank 2+ glasses over 2 hours. Another wonderful showing from this beauty. The nose stars here, with a great perfume of florals along with a bevy of ripe fruits - cassis, red berries, and then blueberry scents that are complimented by the mineral and mature oak. The palate is full bodied, nicely structured with textured tannins, zippy, mineral, a mix of black, blue and red fruits, pencil, earth and a long finish. This was a more youthful bottle and a bit of the reverse of the last bottle in which the palate surpassed what was still an excellent nose. 93+pts.
Red
2000 Domaine de Chevalier France, Bordeaux, Graves, Pessac-Léognan

Slow ox for 4 hours, then double decanted for 1 hour. Drank several glasses over 2 hours. This was really pretty classic PL with a big nose full of blackberry, cassis, tobacco, cigar, blackberry liqueur, spice and minerality. The palate is full bodied, chewy, dense with black fruits, blackberry, blackberry liqueur, glycerin, ripe dark berry, charcoal, tar, tobacco, firm round tannins, and a long finish. Was oh so good with a those beautiful Capital Grille steaks. Still needs a few years to fully unwind . 93+pts.
