Flight 1 - Champagne, Provencal rose, Chablis; matched with Brillat Savarin, Fleur de Maquis, Tomme de Grand Mere, olives, bread
Flight 2 - red Burgs; matched with affine au Chablis, Comte, duck prosciutto, salamis
Flight 3 - Chateauneuf-du-Pape, older Napa cab ringer, Bordeaux; matched with osau iraty, comte, duck prosciutto, salamis
Flight 4 - Sauternes; matched with roquefort, vanilla custard tarts

Flight 1 - Sparkling, Rose, White (3 notes)

White - Sparkling
2003 Dom Pérignon Champagne France, Champagne
Powerful but elegant with good cut and a slightly smoky element.
Rosé
2013 Domaine Tempier Bandol Rosé France, Provence, Bandol
Typical pale salmon color; slight herbal element on aromatics; barely med acidity; last few vintages seem to have lost some of the cut and focus of prior years.

2007 Domaine William Fèvre Chablis Grand Cru Bougros Côte Bouguerots France, Burgundy, Chablis, Chablis Grand Cru
-pretty pale gold/green
-somewhat restrained but classic Chablis nose with sea breeze
-med acidity, med weight faint hints lemon fruit but now dominated by minerality/salinity, not overly complex
-no sign of prem-ox but on a solid maturity plateau as no longer fruit-dominant, less complex than expected

Flight 2 - Red Burgs (2 notes)

2010 Domaine Bertheau (Pierre et François) Chambolle-Musigny France, Burgundy, Côte de Nuits, Chambolle-Musigny
Slow-ox'd 4 hrs
-pretty bright nearly semi-translucent dark red
-aromatic black cherry floral
-med/med+ acidity, med/med- weight great tension sappy if not overly complex red fruit black cherry, good length
-absolutely gorgeous now though still very young with plenty of potential for several years of improvement

2007 Domaine Bertheau (Pierre et François) Bonnes Mares France, Burgundy, Côte de Nuits, Bonnes Mares Grand Cru
Slow-ox'd 4 hrs
-med dark red, minimal bricking
-mild Burg funk, subtle somber dark red fruit and earthiness
-med acidity, med weight med concentration, tightly coiled earth-dominant
-serious, fairly closed, more powerful but much less generous at this point than 2010 Chambolle AC tasted side by side, needs more time

Flight 3 - Big Reds (3 notes)

2007 Le Clos du Caillou Châteauneuf-du-Pape Domaine du Caillou Les Quartz France, Rhône, Southern Rhône, Châteauneuf-du-Pape
Decanted 5 hours
-opaque dark red, no bricking
-moderately aromatic warm kirsch, stoniness
-med/med- acidity, med+ weight and concentration, some subtle grenache fruit and minerality no pronounced mature elements, silky textured, mild heat on fairly long finish
-still holding up well, anticipate another 5 years of improvement as mature elements start to appear, noticeable heat on finish is less pronounced than some other '07 CdPs
Red
1992 Robert Mondavi Winery Cabernet Sauvignon Reserve USA, California, Napa Valley
Decanted, tasted over 30 minutes
-dark red, moderate bricking, not a lot of sediment
-cassis some oak and a hint of mature elements
-med weight cassis OK complexity and length, med- tannins
-shockingly young, this still has quite a bit of fruit and only a hint of developing mature elements though tannins are resolving, gracefully aging classic cab

2003 Château Pontet-Canet France, Bordeaux, Médoc, Pauillac
Decanted 5 hrs
-opaque dark red-purple
-rich almost flamboyant cassis oak
-med- acidity, med+ weight, ripe but not overly roasted cassis fruit and oak
-still a fruit bomb without a lot of maturation but retains some decent balance, expect this to be better in 5-10+ years

Flight 4 - Sauternes (1 note)

White - Sweet/Dessert
2003 Château Rieussec France, Bordeaux, Sauternais, Sauternes
-med bright orange bronze
-somewhat restrained aromatics creme brûlée crust touch of caramel
-lowish acidity, med weight but lacking depth, has a little bit of developing mature flavors but on the simple side, very sweet but not cloying
-a little disappointing, either this is an off bottle or it is in an awkward phase as it's in the process of picking up more interesting mature elements
