March 20, 2016 - Dry, complex and intense-tasting with flavors of lemon drop, quince, mineral, beeswax and hints of basil on the finish.
Nice fresh acidity still but needs to be drank sooner rather then later.
11.5% alc. Medium length finish.

Acids still fresh, fruit has faded, become softer, less vigorous; saline and chalk dominate the core of pear, apple and mineral driven fruit at this point. Good, but prolly better as a cooking wine.
